INDIAN YAM ROAST

RECIPE FOR ELEPHANT YAM FRY

INGREDIENTS
- 1 cup yam / senaikizhangu
- 3 cup water
- 2 tbsp oil
- 1/4 tsp mustard seeds
- 1 tsp urad dal
- 2 tsp bengal gram dal
- 1/4 tsp hing
- 3 tsp garlic - crushed
- 1 spring curry leaves
- 1 tsp turmeric powder
- 1 tsp red chilli powder
- 1/2 tsp coriander powder
- 1/4 tsp cumin powder
- 1/4 tsp fennel seed powder
- 1/4 tsp black pepper powder
- salt - to taste
PROCEDURE
- cut yam into bite sized squares and wash well to get rid of mud smell
- bring water to boil in a sauce pan and add yam
- cook yam in a medium flame until soft yet crunchy enough to bite, then drain the excess water and set the yam aside
- now, heat oil in a cast iron pan and temper with mustard seeds, urad dal and bengal gram dal
- saute for 1-2 minutes until they start to brown, then followed by add chopped garlic and curry leaves and continue saute for another 2 minutes
- now add cooked yam, turmeric powder, red chilli powder, coriander powder, cumin powder, fennel powder and salt
- gently mix well and roast the yam for 8-10 minutes until golden brown
- once yam roasted well turn off the flame
- serve hot with yogurt rice, rasam rice or sambar rice
- Enjoy!
- this recipe works good even for potato and raw banana too
- while cooking yam please make sure not to smash it up
- avoid yams that feel mushy or too soft. yam should feel firm and dense
