Mullangi Sambar is an easy and delicious South Indian variant of sambar with piquant favors of radish, healthy lentils and fragrant spices. This sambar variety is made with white radish a.k.a mullangi in the Tamil Language and mooli in the Hindi language. It is hearty, comforting, filling lentils and radish stew that pairs well with steamed rice, idli, dosa or vada. 

Sambar is one dish that is always on the menu at home once a week. So sometimes I usually prepare sambar with just one vegetable like drumsticks, egg plant, brinjal, okra, etc., This mullangi sambar also falls in this category where the sambar is made mainly with just one vegetable.

Mullangi, white radish in Tamil has extreme coolant properties and makes for a great vegetable to add in the sambar. I love the strong flavor of Mullangi in Sambar, although I know that it is not everyone's favorite vegetable. Try making this Mullangi sambar and I am sure your opinion about this vegetable would change instantly. While this sambar goes well with hot rice, it is also perfect with breakfast recipes like idli, dosa or upma. RECIPE FOR MULLANGI SAMBAR

INGREDIENTS

  • 2 tbsp oil
  • 1/4 tsp mustard seeds
  • 1/2 tsp urad dal
  • 1/4 tsp hing
  • 1/4 tsp cumin seeds
  • 1/4 tsp fenugreek seeds
  • 2 red chillies
  • 1 spring curry leaves
  • 10-12 shallots
  • 1 medium sized tomato - chopped
  • 1 large radish (mullangi) - sliced
  • 1/4 cup tamarind extract
  • 1/4 tsp turmeric powder
  • 1.5 tbsp sambar powder
  • 1/2 tsp red chilli powder
  • salt - to taste
  • 1 cup toor dal - soak for 30 minutes
  • 3-4 garlic
  • 1 cup water
  • 1/2 cup coriander leaves - chopped

PROCEDURE

  • wash and peel radish and cut into roundels
  • soak toor dal in water for 30 minutes and place the bowl in pressure cooker and add turmeric powder, hing and garlic
  • fill the bowl with enough water so that the dal is well immersed
  • pressure cook the toor dal for 3-4 whistles and let the pressure drop down on its own and set aside
  • mash the toor dal using hand blender or with back of the ladle of the spoon
  • now, heat 2 tbsp oil in the pan and temper with mustard seeds, urad dal, cumin seeds, fenugreek seeeds, hing, red chillies and curry leaves
  • add handful of shallots and saute well till it turns translucent, followed by add chopped radish and tomato together
  • mix well and cook the veggies for 3-4 minutes, followed by add thick tamarind extract, turmeric powder, sambar powder and red chilli powder
  • mix well and cover with lid and cook the veggies in low medium flame for 5-8 minutes
  • now add pressure cooked dal, water and salt together
  • mix well and bring this mixture to vigorous boil or until the froth starts to appear on top of the sambar
  • garnish with chopped coriander leaves
  • serve hot with rice and ghee with crispy sides like fryums. Also can be served with hot idli or dosa
  • Enjoy!

NOTES
  • adjust spice level according to your taste
  • for creamy texture, blend the dal well using hand blender
  • for variations, add your favorite veggies like brinjal, drumstick, carrot or string beans
