WHAT IS QUINOA ?
Quinoa is a grain-like crop harvested for its seeds, for those unfamiliar with it. It is not an actual grain, although it is related to grains. For vegetarians and vegans, quinoa is the best grain since it contains the most protein of any grain.
It is a complete protein because it contains all nine essential amino acids. Quinoa is a complete grain that is virtually always organic and free of gluten and cholesterol.
Almost all rice dishes may be made with quinoa instead of rice. This recipe for chicken biryani is one of them. Pick up the quinoa rather than the white rice if you want to eat more whole grains and be healthier overall.
IS QUINOA HEALTHY ?

RECIPE FOR QUINOA CHICKEN BIRYANI

INGREDIENTS
- 2 tbsp ghee
- 1 tbsp oil
- 3 cloves
- 1 cinnamon stick
- 2 bay leaf
- 1 star anise
- 2 cardamom pods
- 1 black stone flower
- 1 tsp cumin seeds
- 2 large onions - thinly sliced
- 2 green chilli - slitted
- 1 tbsp ginger garlic paste
- 1 tomato - chopped
- handful of mint leaves
- handful of coriander leaves
- 1/4 tsp turmeric powder
- 1 tsp red chilli powder
- 1.5 tsp coriander powder
- 1 tsp biryani masala powder
- 1/4 cup yogurt
- 1lb chicken - cut into cubes
- 2 cup water
- salt - to taste
- 1 cup quinoa
PROCEDURE
- rinse well and soak quinoa in fresh water for 20 minutes
- heat ghee and oil in a pressure cooker pan and temper with cloves, cinnamon stick, star anise, bay leaf, cardamom pods, black stone flower and cumin seeds
- saute for few seconds in hot oil, then followed by add thinly sliced onion and green chillies, saute well till onion turns translucent
- now add ginger garlic paste and mix well with onions and cook until the raw smell goes
- next, add chopped tomatoes, mint leaves, coriander leaves, turmeric powder, red chilli powder, coriander powder and biryani masala powder
- mix well and cook in medium flame for 5 minutes or until the raw smell of spice powders goes
- once the raw smell of spice powders goes, it slowly oozes out oil on the sides of the pan, followed by add chicken and yogurt together
- saute the chicken on medium flame for another 6-7 minutes
- add water, salt and mix well, bring this mixture to vigorous boil, now drain the water and add soaked quinoa and mix well
- close with lid and pressure cook for 3 whistle on medium flame. it should take about 4-5 minutes. after the whistles, wait for the pressure to settle down before opening
- once the pressure settles, open the cooker and serve hot with onion raitha or egg fry or chicken fry
- delicious and tasty quinoa chicken biryani is ready
- serve hot with a side of a simple yogurt raita

- adding saffron, roasted cashew nuts, raisins, mint and ghee enhances the taste of biryani a lot more
- adjust spice level according to your taste
- add quinoa to a fine mesh sieve and run it under water and soak it in a bowl of water, it helps to get rid of the bitter outer coating of the seed
