RECIPE FOR CORN CHEESE SANDWICH

INGREDIENTS
For stuffing
- 2 tsp oil
- 1 onion - finely chopped
- 6 garlic - chopped
- 1 green capsicum
- 1 red capsicum
- 1 yellow capsicum
- 1.5 sweet corn - boiled
- 1/2 tsp pepper powder
- salt - to taste
- 1 tsp Italian seasoning
- 2 tbsp coriander leaves - chopped
- 2 tbsp mayonnaise (optional)
- 1/4 cup mozzarella - shredded
- 6 bread (white or brown)
- stuffing - as needed
PROCEDURE
- heat oil in the pan and add chopped onion and garlic
- saute the onions for 3-4 minutes or until it turns translucent
- add chopped red, green and yellow capsicums and cook for 2 minutes
- now add boiled sweet corns along with salt, pepper powder and Italian seasoning
- mix well and cook for 1 minute and finally garnish with chopped coriander leaves
- sweet corn stuffing is ready and transfer the stuffing to a medium sized bowl and cool down at room temperature
- once the stuffing is cool down a bit and now add the mayonnaise and mix well
- take the bread slices and cut the edges and discard it
- place 2 tbsp stuffing in the centre of the bread and spread gently and then add generous amount of shredded mozzarella cheese and then close the filling with another slice of bread
- heat butter on the grill pan and place the prepared sandwich bread and toast on both the sides until it turns golden brown and crisp on both the sides
- once cheese melts, remove the sandwich from from the pan, slice and serve immediately with tomato ketchup

- add veggies of your choice, boiled peas, grated carrot or cabbage goes well
- if you dont like pepper, you can also add red chilli flakes
- grill the sandwich in low medium flame or else it will burnt
- you can also use sharp cheddar cheese for this sandwich
