CHETTINAD KAVUNI ARISI RECIPE | STARTUP COOKING
Black Rice is also known as Karuppu Kavuni Rice or Emperor's rice or Karunkuruvai. In some places, it is also called as Forbidden rice and purple rice. This chettinad kavuni arisi sweet is very famous in chettinad region in Tamil Nadu. The taste of the sweet was very delicious.
Black rice is very popular in South Asia. It contains high levels of different anthocyanin which may provide various health benefits. It is sometimes also called "longevity rice". This rice can be consumed alone as a side dish or included in salads, stir fry dishes or even desserts.
To make this delicious chettinad dessert, just wash and pressure cook the rice till mushy and mix with sugar, coconut and fried cashews. It's so simple and easy to make. The rice needs to be soaked for long time as it is hard. Though it turns soft after cooked, but the taste we get the chewy chunks of rice while eating. RECIPE FOR CHETTINAD KAVUNI ARISI

INGREDIENTS
- 1/2 cup black rice (kavuni arisi)
- 5 cup water
- 1/2 - 3/4 cup sugar
- 1/2 cup grated coconut
- 1/2 tsp cardamom powder
- 1 tbsp ghee
- 10 cashews
PROCEDURE
- wash the black rice (kavuni arisi) 3-5 times to remove the dust and then soak it in lots of water for 12-13 hours
- after soaking time, drain the excess water and add soaked black rice into the pressure cooker along with 5 cup of water
- close with lid and pressure cook the rice in low flame for 7-8 whistles till the rice becomes slightly mushy
- after the steam is released, open the cooker and you may see the white part and bran separately. Now the rice should be soft and mild chewy
- just mash the rice with a potato masher or ladle and immediately add sugar, grated coconut and cardamom powder
- mix well
- after adding the sugar, the cooked rice will loosen up and try to adjust the consistency of the sweet and cook in low flame for 5 minutes until it becomes slightly thick and then switch off the flame
- heat a tbsp of ghee in the pan, add cashews and fry till golden brown
- add roasted cashews into the sweet rice and mix well
- sweet kavuni arisi is ready, serve hot or warm
- it taste delicious 😋
- you can substitute sugar with grated jaggery
- add less sugar if you wish
- this black rice takes more time to cook than white rice. so cook in low flame for more whistles
- old black rice takes more water and the new rice takes less cup water. so adjust the consistency of the water you need
