Javvarisi Upma is a quick, healthy and delicious breakfast option made from sago pearls. This is one of the easiest and tasty breakfast in the busy morning hours. This can be eaten as plain or with coconut chutney, tomato chutney or with a cup of tea or coffee. This upma takes just 20 minutes to prepare, you can also add your favorite veggies and nuts to make even more healthier.
Javvarisi (sago) is mostly used for fasting, a larger population is still unaware of what sago is and how it is made. It is full of starch and contains carbohydrates. It is collected from the spongy centre of tropical palm trees. The tapioca plant's root is used to extract the starch; then, the starch is transformed into small, pearl-like spheres. This is how sago is made. Sago provides ample energy, it is gluten free and non-allergic, also it helps to prevent digestion issues.

RECIPE FOR JAVVARISI UPMA

INGREDIENTS
- 1 cup javvarisi (sago)
- 1 tbsp oil
- 1/4 tsp mustard seeds
- 1/2 tsp urad dal
- 1/2 tsp bengal gram dal
- 1/4 tsp hing
- 5 curry leaves
- 3 green chilli - slit
- 1 tsp ginger - chopped
- 1 onion - chopped
- salt to taste
PROCEDURE
- rinse javvarisi in water for 2-3 times and then soak javvarisi overnight or atleast 6 hours with enough water
- after overnight soaking, drain the water and keep the javvarisi aside
- heat oil in the pan, temper with mustard seeds, urad dal, bengal gram dal, hing, curry leaves, slitted green chillies and chopped ginger
- saute for few seconds and then add finely chopped onions and saute well until it turns transparent
- add salt and give a good mix
- add soaked javvarisi (sago) and mix well
- keep cooking and stirring until the javvarisi starts turning transparent (this process takes about 3-4 minutes ) and make sure it should not turn mushy
- Even the javvarisi starts sticking, just keep mixing until it turns transparent
- once all the javvarisi turns fully transparent, then switch off the flame
- serve hot
- toss the javvarisi well to avoid sticking to the bottom
- adjust green chillies according to your taste
- soak Javvarisi overnight for better results
