Muttai Podimas / Muttai Poriyal is a South Indian style scrambled eggs. This egg stir fry is an easy and quick recipe which can have it for Breakfast / Lunch. It goes well with steamed rice, sambar rice, rasam rice, chapathi, etc., It just takes only 20 minutes to prepare.

Muttai Podimas tastes too good. If you don't have veggies in hand, this is one of the best and easiest dish to cook. Eggs are a source of high proteins, vitamins and minerals. RECIPE FOR MUTTAI PODIMAS

INGREDIENTS

  • 2 tbsp oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1 spring curry leaves
  • 2 green chillies - chopped
  • 1 onion - finely chopped
  • 1 small tomato
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1/4 tsp cumin powder
  • 1/4 tsp ground pepper powder
  • salt to taste
  • 3 egg
  • 1/4 cup coriander leaves - chopped

PROCEDURE

  • heat oil in the pan, temper with mustard seeds and cumin seeds
  • add chopped curry leaves and green chillies
  • saute for few seconds
  • add finely chopped onion and saute well until it turns transparent
  • add chopped tomato, turmeric powder, red chilli powder, cumin powder, ground pepper powder and salt
  • mix well and cook for 2 minutes
  • once the tomatoes cooked well, crack all the 3 eggs and add in to the pan
  • wait for few seconds and then scramble the eggs and mix well in the mixture
  • keep stirring the mixture till the eggs are cooked
  • cook for 1 minute in low flame and then garnish with chopped coriander leaves
  • mix well and then switch off the flame
  • Enjoy ! with rice or chapathi
NOTES

  • adjust spice level according to the taste
  • you can scramble eggs in the separate pan and then add into the onion tomato mix
  • please don't over cook the eggs or else it turns very dry and rubbery

MUTTAI PODIMAS WITH STEP BY STEP PHOTO RECIPE


heat oil in the pan, temper with mustard seeds, cumin seeds, curry leaves and green chillies, saute for few seconds


add finely chopped onion


saute well until it turns transparent


add chopped tomato, turmeric powder, red chilli powder, cumin powder, pepper powder and salt


cook the tomatoes for 2 minutes


crack 3 eggs and add into the mix


mix well


scramble the eggs and cook well


cook for 1 minute and then switch off the flame


add chopped coriander leaves


mix well


serve with sambar rice, rasam rice, etc.,
