Carrot Thoran is one of the easiest and most loved side dishes in Kerala Cuisine. Thoran is made by one or more vegetables with grated coconut and tempering with mustard seeds, urad dal, curry leaves and green chillies.
This Kerala style carrot thoran recipe is very easy to make, super quick and tastes very delicious. It is also known as carrot poriyal in other parts of South India. It goes well with sambar rice, curd rice, etc.,

RECIPE FOR CARROT THORAN

INGREDIENTS
- 1 tbsp oil
- 1/2 tsp mustard seeds
- 1 tsp urad dal
- 1/2 tsp cumin seeds
- 1/8 tsp hing
- 1 spring curry leaves
- 3 green chillies - slit
- 1 tsp ginger - chopped
- 1 small onion - finely chopped
- 5 large carrots - grated - 2 cup
- 1/4 tsp turmeric powder
- salt to taste
- 1/3 cup grated coconut
PROCEDURE
- heat oil in the pan
- temper with mustard seeds, urad dal, cumin seeds and hing powder
- saute for few seconds
- add curry leaves, slit green chillies and chopped ginger
- saute well for few seconds
- add finely chopped onion and saute well until transparent
- add grated carrot, turmeric powder and salt
- mix well
- cover with lid and cook on low medium flame for 10 minutes (stir occasionally) or until the carrot cooked well
- once the carrot is cooked well, add grated coconut and mix well
- cook for 1 minute and then switch off the flame
- Enjoy with sambar rice or curd rice
- adjust green chillies as per your taste
- this thoran is just a stir fry, so don't add water while cooking
- cook only in low medium flame
- don't cook more than 1 minute after adding the coconut
