FINGER MILLET COOKIES RECIPE | STARTUP COOKING
Ragi biscuits are delicious, healthy and nutritious cookies made from ragi flour, wheat flour, brown sugar, butter and cocoa powder. Ragi is also known as finger millet or red millet or nachni in most Indian languages. This recipe is so simple and easy to bake under 30 minutes.
Ragi biscuits are rich in fiber and high in iron and calcium content. It helps in strengthening bones in kids and it has lots of health benefits and prevents obesity. This finger millet cookies is a perfect healthy nutritious after school snack for kids. Store this delicious cookies in an air tight container for weeks and it doesn't go bad. RECIPE FOR FINGER MILLET COOKIES

INGREDIENTS
- 1 cup ragi flour
- 1/4 cup whole wheat flour
- 1 tbsp unsweetened cocoa powder
- 1/2 tsp baking powder
- 1/3 cup unsalted butter - melted
- 1/2 tsp vanilla essence
- 1/2 cup powdered brown sugar or jaggery
- 3-4 tbsp milk
PROCEDURE
- in the mixing bowl, add ragi flour, whole wheat flour, cocoa powder and baking powder
- mix well without any lumps
- now add melted butter, vanilla essence, brown sugar and milk
- mix well and make a dough (do not add more milk)
- use a medium sized scoop and scoop out the dough and then roll like a ball
- now gently flatten the ball using the fork
- place the prepared cookie on the baking tray lined with parchment paper
- pre heat oven at 350 F and bake for 10 -12 minutes
- once done remove from the oven and cool down completely on the cooling rack
- serve ragi biscuits with a cup of tea or coffee
- Enjoy!
- store the cookies in an air tight container up to 3 weeks
- add little milk just enough to gather the mixture to form a dough (do not add more milk)
- cookies will look soft when come out of the oven but it will turn crunchier once after cooling down
