Poondu Idli Podi - a flavorful podi made of roasted garlic, bengal gram dal, urad dal, red chillies and curry leaves. This is one of the comfort side dish recipe for morning breakfast in Tamil Nadu. During school days, 50% of all the school lunch boxes were packed with sesame oil coated podi Idly. In our house, we all need this podi even if there is chutney for Idly.
Poondu Idli Podi is easy to prepare and goes very well with Idli, dosa, uthappam and rice. This podi tastes little spicy and very flavorful to the mouth. For making podi idli, mix the idli podi with sesame oil and apply all over the idli and sprinkle the idli podi on top of the uthappam or dosa to make the recipe more delicious. RECIPE FOR POONDU IDLI PODI

INGREDIENTS
- 3/4 cup urad dal
- 1/2 cup bengal gram dal
- 1 tbsp toor dal
- 20 garlic cloves - crushed
- 15 red chillies
- 1/4 cup curry leaves
- 1/4 tsp hing
- salt to taste
- 1tsp oil
PROCEDURE
- in a pan, dry roast urad dal until it turns light golden brown
- remove the urad dal from the pan and set aside to cool
- in the same pan, add bengal gram dal and toor dal and dry roast in low medium flame until it turns golden brown, remove the dals from the pan and set aside to cool at room temperature
- add a tsp of oil in the pan, add crushed garlic cloves and roast the garlic in the oil until it turns light golden brown
- once garlic turns golden brown, remove from the pan and set aside to cool
- again in the same pan, add red chillies and curry leaves, dry roast in low flame until the leaves turn crisp, then switch off the flame
- transfer all the roasted ingredients into the mixer grinder along with hing and salt
- grind to a slight coarse powder
- poondu idli podi is ready to serve with idli, dosa and uthappam
- store this podi in an air tight container
- taste delicious
- adjust spice level according to your taste
- store at room temperate and stays good for 1 month
- serve with hot rice drizzled with a tsp of ghee
- serve with idli and dosa with a tsp of sesame oil
