Texas caviar is a salad of black beans, black eyed peas, corn, tomatoes and so much more in an Italian style dressing, often eaten as a dip accompaniment to tortilla chips. This caviar was created in the U.S. state of Texas around 1940 by Helen Corbitt. She first served the dish on New Year's Eve at the Houston Country Club. Later, she served it at the Driskill Hotel in Austin, Texas, there it was given its name "Texas Caviar" and its also called Cowboy Caviar. source - wiki

INGREDIENTS
- 3 roma tomatoes - chopped
- 1 bell pepper - chopped
- 1 red onion - chopped
- 2 jalapeno peppers - chopped
- 1 large avocado - chopped
- 1 cup sweet corn - boiled
- 1 cup black beans - boiled (refer notes)
- 1 cup black eyed peas - boiled (refer notes)
- 3/4 cup coriander leaves - chopped
- 2 tbsp lemon juice
- 6 garlic - grated
- salt to taste
- 1/2 cup Italian dressing

PROCEDURE
- in a large mixing bowl, combine chopped onion, tomato, bell pepper, jalapeno, avocado, boiled corn, black beans, black eyed peas, chopped coriander leaves and grated garlic
- add lemon juice, salt and Italian dressing
- mix everything together and serve with tortilla chips
- toss well before eat
- for black beans and black eyed peas, soak overnight in water and pressure cook in pressure cooker for 7-8 whistle
