RED POHA UPMA | STARTUP COOKING
Red Poha Upma is a quick, healthy and delicious breakfast option made with flattened rice. This is one of the regular breakfast at home. This can be eaten as plain or with coconut chutney, red chutney or with a cup of tea or coffee. This upma takes just 15 minutes to prepare, here i added carrot and peas in the upma, you can also add capsicum and potatoes, it goes well in this upma.
Red Poha is nothing but flattened rice made from red rice. Red poha nutrition value is higher when compared to white rice flakes. In the recent times, red rice got much attention because of its health benefit properties. The red colour is due to the presence of a pigment called anthocyanin, which is also a flavonoid. Unlike white rice, red rice doesn't undergo excessive processing, so the other bran layer remains intact, which is rich in fibre, vitamin B and other minerals. Flattened rice, beaten rice, poha, atukulu, aval and avalakki are other beautiful names.

RECIPE FOR RED POHA UPMA

INGREDIENTS
- 1.5 cup red poha
- 3/4 cup water
- 2 tbsp oil
- 1/2 tsp mustard seeds
- 1 tsp urad dal
- 1/8 tsp hing
- 1 spring curry leaves
- 2 green chilli - slitted
- 1 inch ginger - chopped
- 1 large onion - thinly sliced
- 1/4 cup carrot - grated
- 1/4 cup peas
- salt to taste

PROCEDURE
- wash and soak red poha in water for 15 minutes (add water just to immerse in the poha)
- heat oil in the pan
- temper with mustard seeds, urad dal, hing, curry leaves, green chilli and chopped ginger
- saute for few seconds
- add thinly sliced onion and saute well for 2 minutes or until the onion turns transparent
- now add grated carrot, peas and salt
- mix well with the onions and saute for 2 minutes
- drain the excess water from the red poha and add poha into the pan
- mix well with mixture
- cover and cook the upma for 3 minutes in low flame and then switch off the flame
- keep covered until serving
- this is an excellent healthy morning breakfast
- add veggies of your choice
- do not add more water for soaking the poha, or else it will turn soggy
