Shankarpali or Shakarpara is a crispy and light sweetened snack prepared using all purpose flour, sugar and ghee. Shankarpali also known as Sweet Tukdi or Shakkarpara. This snack looks like bite sized sugar cookies and its a perfect tea time snack.
Shankarpali is very popular in South India and Maharashtra which usually prepared during the festive seasons like diwali, christmas and holi, etc.,
There is another similar recipe called Shakkar pare. A lot of people think that shankarpali and shakkar pare are the same thing. They are not. There is a big difference in the recipe. Shakkar pare are dunked in sugar syrup after being fried. Mainly, the sugar syrup should be 2-3 thread consistency. In Shankarpali, ghee is the key ingredient. It makes the biscuit very crumbly, flaky and crispy, it results melts in your mouth.

Make this biscuit in a large quantity and store in an airtight container for weeks because this snack doesn't go bad and it can be stored for a month. It is also a great after school snack for kids. INGREDIENTS
- 2.5 cup all purpose flour / maida
- 1/2 cup ghee
- 1/2 cup sugar
- 1/2 cup hot water
- 1/8 tsp baking soda
- pinch of salt
- oil - for deep frying
PROCEDURE
- in a mixing bowl, mix hot water, sugar, salt and baking soda
- whisk well until the sugar melts
- add all purpose flour and ghee, mix well and make a soft and stiff dough (make sure the dough should not stick)
- sprinkle some all purpose flour on the board and roll the dough in to 1/4 inch thickness using rolling pin
- cut them into little cubes using a knife or pizza cutter
- drop the cubes gently in hot oil and deep fry in low medium flame
- fry the biscuit until the bubble ceases and it turns light brown
- once cooked, remove the biscuit from the hot oil and drain the excess oil in the paper towel
- shankarpali is ready
- repeat the process with the remaining dough
- cool down completely and then stored in an air tight container
- Enjoy this shakarpare with a cup of hot tea
- its really a tempting snack. Try it
- check the oil before frying, shankarpali should fry only on low medium flame
- dough should be soft, stiff and non sticky dough
- cool down completely before storing in air tight container
- you can also use wheat flour instead of all purpose flour
