INGREDIENTS

  • 1 pound dried spaghetti
  • kosher salt to taste
  • 1/3 cup olive oil
  • 15 garlic cloves - chopped
  • 3/4 tsp red chilli flakes
  • 1/2 cup fresh parsley - finely chopped
  • 1/2 cup grated parmesan cheese 

PROCEDURE

  • bring a large pot of water to a boil
  • add a pinch of salt and a tsp of olive oil, mix well
  • add the spaghetti  and cook according to the package instructions until done
  • once spaghetti  cooked well, drain the excess water and set aside
  • heat olive oil in a pan
  • add chopped garlic and toss well for 2 minutes until it turns brown
  • add red chilli flakes and saute for 30 seconds
  • add the cooked spaghetti and toss well for 30 seconds and then switch off the flame
  • garnish with grated parmesan cheese, chopped parsley and little red chilli flakes
  • serve hot with extra parmesan on the side
NOTES
  • to get perfect aglio e olio recipe, toss the garlic pieces to a perfect golden brown in the olive oil. If it's too light, you wont get the full flavor and if its too dark it gets bitter taste
  • allow the pasta a couple of minutes in the sauce before serving, it needs to absorb the flavors
  • if you have leftover spaghetti store them in the fridge for up to 3 days
  • try to use quality extra virgin olive oil as it is a main ingredient in making the sauce

Spaghetti Aglio E Olio With Step By Step

bring water to boil in a sauce pot, add salt and a tbsp of olive oil


add spaghetti


cook according to the package instructions


cooked well (dont over cook)


drain the excess water using strainer and set aside


heat olive oil in a pan, add chopped garlic


saute well till it turns brown


add red chilli flakes and toss well for 30 seconds


add cooked spaghetti


mix well with the olive oil and garlic and then switch off the flame


add grated parmesan cheese, chopped parsley and chilli flakes


mix well and serve hot
