It's popularity can be attributed to it being simple to prepare and the fact that it makes use of inexpensive, readily available ingredients that have long shelf lives in a pantry.

RECIPE FOR SPAGHETTI AGLIO E OLIO

INGREDIENTS
- 1 pound dried spaghetti
- kosher salt to taste
- 1/3 cup olive oil
- 15 garlic cloves - chopped
- 3/4 tsp red chilli flakes
- 1/2 cup fresh parsley - finely chopped
- 1/2 cup grated parmesan cheese
PROCEDURE
- bring a large pot of water to a boil
- add a pinch of salt and a tsp of olive oil, mix well
- add the spaghetti and cook according to the package instructions until done
- once spaghetti cooked well, drain the excess water and set aside
- heat olive oil in a pan
- add chopped garlic and toss well for 2 minutes until it turns brown
- add red chilli flakes and saute for 30 seconds
- add the cooked spaghetti and toss well for 30 seconds and then switch off the flame
- garnish with grated parmesan cheese, chopped parsley and little red chilli flakes
- serve hot with extra parmesan on the side
- to get perfect aglio e olio recipe, toss the garlic pieces to a perfect golden brown in the olive oil. If it's too light, you wont get the full flavor and if its too dark it gets bitter taste
- allow the pasta a couple of minutes in the sauce before serving, it needs to absorb the flavors
- if you have leftover spaghetti store them in the fridge for up to 3 days
- try to use quality extra virgin olive oil as it is a main ingredient in making the sauce
