PARUPPU VADAI RECIPE | MASALA VADA | STARTUP COOKING
Masala vada is a crispy and savory deep fried fritter made from bengal gram dal and some spices. It is a popular street food of Tamil Nadu and which is available in most of the road side shops and hotels.
In Tamil Nadu it is called as paruppu vadai. This recipe is quite simple to prepare and easy to make in less than 25 minutes. Serve this masala vada with a cup of hot tea as evening snack, or serve as a side dish for sambar rice and rasam rice.

RECIPE FOR MASALA VADAI

INGREDIENTS
- 1 cup bengal gram dal (chana dal)
- salt to taste
- 3 red chillies
- 2 green chillies
- 1 tsp ginger - chopped
- 1/4 tsp hing (asafoetida)
- 1 tsp fennel seeds
- 1 large onion - finely chopped
- 1 spring curry leaves - finely chopped
- 1/2 cup coriander leaves - chopped
- oil - for deep frying
PROCEDURE
- soak bengal gram dal in water for 3-4 hours
- drain the dal after hours
- take 2 tbsp soaked dal and set aside until use
- add remaining dal in to the mixer grinder along with red chillies, green chillies, ginger, hing, fennel seeds and salt
- sprinkle little water and grind to a coarse paste
- transfer the batter into the mixing bowl, along with 2 tbsp soaked bengal gram dal, chopped onions, curry leaves and coriander leaves
- mix well
- take a small lemon sized batter in hand and make a ball
- gently flatten the ball in hands and gather the edges to smoothen
- gently lower the vadai in hot oil and cook on medium flame
- cook the vadai on both the sides until golden brown
- remove the vadai from oil and drain on paper towel
- serve hot with coconut chutney
- Enjoy !
- adjust chillies according to your taste
- if the soaking time of dal is less, you will not get a crispy vadai
- dont add too much water while grinding the batter
- do not deep fry vadai on high flame otherwise it will turn dark brown fast and remains uncooked from inside
