KARA SEV RECIPE | STARTUP COOKING
Kara Sev is a very popular and traditional South Indian snack made during diwali, its quite easy with just few ingredients. Sev has a crunchy and very aromatic flavor of pepper and it tastes completely different from other murukku varieties. It is served with a cup of hot tea or can be eaten just like that. It tastes so delicious and crispy in every bite.
Kara Sev is usually made by pressing the dough through a ladle with holes to give a shape. The dough falls in hot oil and then it will be fried until crisp. But this method is slightly harder so i used murukku maker for making kara sev.
You can prepare this Kara Sev at festivals such as Diwali, Gokulashtami, Christmas, etc., This easy to make South Indian recipe can be made using ingredients which are easily available in every household's kitchen such as rice flour, besan flour, pepper corn, hing and salt. This recipe can be made under 20 minutes.

RECIPE FOR KARA SEV

INGREDIENTS
- 1 cup bengal gram flour (kadalai maavu)
- 1/2 cup rice flour
- 1 tbsp black peppercorn - coarsely ground
- 1/4 tsp hing (asafoetida)
- salt to taste
- 2 tbsp unsalted butter - at room temperature
- water - as needed
- oil - for frying
PROCEDURE
- crush a tbsp of black peppercorn coarsely in the mixer grinder. Just pulse for 2 second (not too fine or too coarse)
- in a mixing bowl, sieve the bengal gram flour and rice flour
- in the bowl, add crushed black peppercorn, hing, salt and unsalted butter
- mix well with your clean hands
- add water little by little and make a soft, smooth and firm dough
- kara sev dough is ready and cover with wet cloth until use
- meanwhile, heat oil in a wok
- take a 3 hole round shaped disc and fit inside the murukku press
- grease with little oil inside the mould
- fill the mould with small portion of dough and close tightly
- press the mould directly in hot oil
- cook on medium flame until the bubble reduces
- flip over to other side and cook evenly
- once the sev is done, remove from the oil and drain the excess oil in tissue paper
- repeat the process with the remaining dough
- cool down completely and store in air tight container
- serve as a snack with a cup of tea

- do not leave the sev in oil once the bubble reduces, it turns over frying and the sev turn very hard
- do not replace the crushed peppercorns with pepper powder
- you can also add cumin seeds if you like
- adjust spice level according to your taste
