GHEE RICE RECIPE | STARTUP COOKING
Ghee rice is also known as Neychoru is one of the most simplest and easiest one pot rice recipe made using ghee (clarified butter), basmati rice and whole spices. This rice can be prepared in just 20 minutes.
Ghee rice is very flavorful and delicious in taste. I added fried onions and cashews for garnishing, which gives extra flavor to the rice. Traditionally, ghee rice is made with seeraga samba rice, here i used basmati rice, you can also use sona masoori rice as well. Don't over cook the rice or else it will turn mushy.

INGREDIENTS
- 1 cup basmati rice
- 2 tbsp ghee
- 3 cloves
- 2 inch cinnamon stick
- 3 cardamom pods
- 1 bay leaf
- 1 star anise
- 1 mace
- 2 green chilli - split
- 2 cup water
- salt to taste
- 12 cashews - for garnish
- 1/4 cup onion - thinly sliced - for garnish
PROCEUDRE
- soak basmati rice in water for atleast 30 minutes
- melt ghee in a pan
- fry cashews till golden brown and set aside
- in the same pan, add thinly sliced onions and fry till golden brown and set aside
- these fried onions and cashews are used for garnishing and they add extra flavor to the rice
- in the remaining ghee, add whole spices like cloves, cinnamon stick, cardamom pods, mace, star anise, bay leaf and green chillies
- saute well in low medium flame until nice flavor comes
- add soaked basmati rice and saute well for 1 minute
- add 2 cup water and salt
- mix well
- boil the rice over high flame for 5-6 minutes (the rice will drink most of the liquid and now the rice cooked almost to 60%-70%)
- cover with tight lid and cook on very low flame for 15 minutes
- switch off the flame and rest the ghee rice for another 10 minutes
- open the lid and garnish with fried onions and cashews
- serve hot with any appetizers or kurma or paneer recipes
