Coconut Date Balls are little nutrition balls made with dates and nuts and then coated in  coconut powder - an easy to make sweet and healthy vegan snack.

These coconut date balls are one of my favorite simple snack recipes for healthy snacking. These energy date balls are naturally sweetened by the dates and contain no sugar. These energy bites are perfect for morning breakfast, lunch boxes and for picnics. Dates balls are absolutely delicious in taste.  Follow my step by step photo recipe to prepare Coconut Date Balls. Indian Sweets

INGREDIENTS

  • 1/3 cup cashews
  • 12 dates 
  • 1/2 cup coconut (grated, shredded or powder)
  • 1 tsp coconut ghee
  • 2 tbsp coconut powder

PROCEDURE

  • add a tsp of ghee /oil in a pan and fry the cashews till it turns crisp
  • add the roasted cashews into the food processor and pulse for 10 seconds
  • add dates, shredded coconut and coconut oil into the processor
  • pulse for a minute or until the mixture comes together and no big cashews or dates remain
  • with a tbsp of spoon or a scoop, scoop out the mixture and roll in between hands to form a ball
  • place the  coconut powder in a bowl and roll the balls in the coconut
  • place the prepared balls in the mini muffin liner and refrigerate for 1 hour
  • coconut date balls ready to serve
  • store the remaining balls in the refrigerator

NOTES
  • even you can roll the date balls in sesame seeds
  • if you dont have cashews replace with almonds, pecans or walnuts
  • stays good in the refrigerator for 10 days

Coconut Date Balls With Step By Step

heat a tsp of ghee in a pan, add cashews


roast the cashews in low flame till it turns brown


add the roasted cashews into the food processor


pulse for 10 seconds


add dates and shredded coconut


pulse for 1 minute


with a tbsp of spoon or a scoop, scoop out the mixture and roll in between hands to form a ball


 place the coconut powder in a bowl and roll the balls in the coconut


place the prepared balls in the mini muffin liner and 
refrigerate for 1 hour
