CRISPY POTATO FINGERS RECIPE | STARTUP COOKING
Today I am sharing a quick and easy snack recipe "Potato Fingers" using potatoes, rice flour, corn flour, herbs and cheese, it can be shallow fried or deep fried, here i prepared by deep frying. The texture of this snack is crunchy and crispy on outside and soft inside.
Potatoes are famous for snacks, like cutlets, rolls, samosas and fries. This is one more addition to our snack list. This recipe is very simple and easy to prepare under 15 minutes.
Potato Fingers are a delicious snack that everyone will love. Definitely, your kids will ask you to prepare again and again. They make a perfect snack and what's even better is that they're so easy to prepare. You can refrigerate the prepared fingers or sticks and fry them up whenever going to serve.

RECIPE FOR POTATO FINGERS

INGREDIENTS
- 2 boiled potatoes
- 1/2 cup rice flour
- 3 tbsp corn flour
- 1/2 tsp black pepper powder
- 1/2 tsp red chilli flakes
- 1/4 cup coriander leaves
- salt to taste
- 1 tsp oil
- 1/2 cup mozzarella cheese - grated
- oil - for deep fry
PROCEDURE
- take boiled potatoes in a bowl
- mash the potatoes using potato masher
- add rice flour, corn flour, coriander leaves, pepper powder, red chilli flakes and salt
- mix well and make like a dough
- add mozzarella cheese and knead the dough well
- grease hand with little oil from sticking
- pinch a small sized dough and make a ball
- place it on the board, press between the palms and make a cylindrical shape to a finger length
- continue the same process with remaining dough
- gently place the prepared potato fingers in hot oil
- deep fry for 5-8 minutes until crispy and golden brown, stir occasionally
- drain the fried potato fingers in kitchen towel to remove excess oil
- serve hot with tomato ketchup
- potato fingers tastes great when served hot
- add more cheese if you like
- you can also roll the fingers in bread crumbs or roasted rava for more crispiness
