Pineapple fried rice is a healthy dish made by stir frying rice, pineapples and vegetables, resulting in an amazing medley of sweet, savory and tangy flavors. This is vegan and gluten free.

RECIPE FOR PINEAPPLE FRIED RICE

INGREDIENTS
- 1 cup basmati rice
- 3 cup water
- 2 tbsp oil - vegetable or sesame oil
- 10 cashews - cut into half
- 1 tbsp raisins
- 1.5 tbsp garlic - chopped
- 2 green chilli - slitted
- 2 tbsp white onions - chopped
- 2 tbsp spring onions - chopped
- 1/2 cup capsicum - chopped
- 1/4 cup carrot
- 1/4 cup peas - boiled
- 1/4 cup corn - boiled
- 1/2 tsp garam masala powder
- 2 tsp soy sauce
- 1 tsp vinegar
- salt to taste
- 1.5 cup pineapple chunks
- 1/2 tsp black pepper powder
- 2 tbsp coriander leaves - chopped
- 2 tbsp spring onions - for garnish
PROCEDURE
- rinse and soak the rice in enough water for 30 minutes
- bring water to boil, add a tsp of oil and then add soaked basmati rice
- cook the rice until 95% cooked
- drain the excess water and keep the rice aside
- heat oil in a pan, add cashews and raisins
- saute for few seconds, once cashews changes color, add chopped garlic and green chilli
- saute in high flame, garlic turns light brown and you can smell the nice aroma of garlic
- add chopped spring onions and white onions
- saute well until onion turns translucent
- add chopped capsicum, carrot, boiled peas and corn
- cook on high flame for 1 minute
- now add soy sauce, vinegar, garam masala powder and salt
- mix well
- add pineapple chunks
- saute well and cook for 2 minutes or until you smell the nice flavor of pineapples
- add cooked rice
- mix altogether and toss well for 2 minutes
- add black pepper powder and chopped coriander leaves
- toss well with the rice and then switch off the flame
- garnish with spring onions
- serve hot or warm
- cooking rice is the main key for the perfect fried rice
- if you have leftover rice in the fridge, a great way to use it up
- adjust spice level according to your taste
- add veggies of your choice

soak basmati rice in water for 30 minutes
bring water to boil, add rice and oil
once 95% of rice cooked, switch off the flame
drain the excess water and cool the rice completely
heat 2 tbsp of sesame oil
