Here is the another delicious recipe with capsicum. Capsicum gravy made with freshly ground tomato cashew paste along with onion and some spices. This is one of the most simple recipe that goes well with chapathi, roti, paratha or pulao. This recipe can also be made for special occasions like birthday parties, pot lucks or in the weekends.

For bright red color, i have used kashmiri red chilli powder, for richness and creamy texture i grounded cashews along with tomatoes. RECIPE FOR CAPSICUM GRAVY

INGREDIENTS
To Grind
- 3 tomato - chopped
- 10 cashews
- 5 cloves
- 2 inch cinnamon stick
- 3 tbsp oil
- 1/2 tsp cumin seeds
- 1 large onion - finely chopped onion
- 3 green chilli
- 1 tbsp ginger garlic paste
- 1/4 tsp turmeric powder
- 1 tsp red chilli powder - spicy
- 2 tsp coriander powder
- 1/2 tsp kashmiri red chilli - optional
- salt to taste
- 1/2 cup water
- 1 capsicum - cubed
- 1/2 tsp sugar
- 1/4 cup coriander leaves - chopped
PROCEDURE
- in a blender, add chopped tomato, cashews, cloves and cinnamon stick
- blend to a smooth puree without adding water and set aside
- heat oil in a pan
- temper with cumin seeds
- add finely chopped onion and slitted green chilli
- saute for few minutes in medium flame until it turns translucent
- add ginger garlic paste
- saute for few minutes until the raw smell goes
- add turmeric powder, red chilli powder, kashmiri red chilli powder, coriander powder and salt
- mix well and cook the spice powders for 30 seconds to 1 minute or until the raw smell of spices goes
- add tomato puree and 1/2 cup water
- mix well
- cover and cook in low medium flame for 5 minutes or until the oil starts to separate from the gravy
- add cubed capsicum and sugar
- mix well
- cover and cook again in low medium flame for another 5 minutes
- garnish with chopped coriander leaves
- serve hot with chapathi or paratha
- kashmiri red chilli powder is optional but it gives very good color to the gravy
- adjust spice level according to your taste
- for variation replace cashews with almonds
