Zeppola or Zeppole, sometimes called frittelle is an italian pastry made with flour, butter, milk, sugar and salt.
Zeppole is generally a deep fried doughnuts. These fritter is usually dust with confectioner sugar and the consistency will be light, puffy, melt in your mouth center. These italian doughnuts are simple to make and easy to prepare in minutes. Taste was absolutely delicious.
Zeppole are known by other names, including bigne di San Giuseppe in Rome, St. Joseph's day cake and Sfinge. Zeppole are traditionally consumed during the Festa di San Giuseppe (saint Joseph's day) celebrated every March 19. (referred in wikipedia)

RECIPE FOR ZEPPOLE - ITALIAN DOUGHNUTS

INGREDIENTS
- 1/2 cup water
- 1/2 cup whole milk
- 1 stick unsalted butter (8 tbsp)
- 1 tsp granulated sugar
- 1/4 tsp salt
- 1 cup all purpose flour
- 4 eggs - at room temperature
- oil for fry - vegetable oil or peanut oil
- 1/4 cup confectioners sugar - to dust
PROCEDURE
- in a sauce pan, add water, milk, unsalted butter, granulated sugar and salt
- mix well and cook on medium flame and stir frequently
- butter will slowly starts to melt down
- once butter melted thoroughly, add all purpose flour and combine well with wooden spoon
- now cook on very low flame and stir constantly for another 2 minutes to release the extra moisture
- now the dough will be partially cooked and it will form a soft and smooth dough, then switch off the flame
- Immediately transfer the dough in to the mixing bowl and allowed the dough to cool at room temperature
- once the dough slightly cools down, add 4 eggs at a time
- using electric mixer, beat the eggs for 2 minutes
- scrap down the sides, beat again for another 1 minute or until it forms a thick paste
- heat vegetable oil in the wok (i used peanut oil)
- scoop out the dough and gently drop the balls in hot oil and fry in low medium flame for 2 minutes
- flip over to other side and cook evenly for another 2-3 minutes
- doughnuts turn light golden brown, once the oil oozes out completely, remove the doughnuts from oil and place it on paper towel to remove excess oil
- continue to make all the doughnuts with the remaining dough in batches
- dust with confectioner sugar
- serve warm
- drain the excess oil in the paper towel before dusting with confectioner sugar
- you can also use peanut oil and canola oil
- if you have deep fryer, set the oil to 375 degree F and fry the doughnuts
- dont crowd the doughnuts in oil, otherwise it won't fry properly
- you can use cinnamon powder for dusting, which gives excellent flavor
