Spinach corn rice is a healthy and tasty rice recipe that you can make within minutes using your leftover rice or freshly cooked rice. Spinach corn rice is made with fresh spinach, corn, green chillies and whole spices. This rice is vegan and gluten free.
Spinach corn rice can be prepared under 30 minutes in pan method. If you choose pressure cooker method, cook this rice in 3 whistle. This recipe is perfect for lunch boxes and its a great choice for fussy kids who don't eat green leaves. Spinach corn rice goes well with raita and papad. RECIPE FOR SPINACH CORN RICE

INGREDIENTS
To Cook Rice
- 1 cup basmati rice
- 5 cup water
- 1 tsp oil
- 2 cup spinach
- 1.5 tbsp oil
- 1/2 tsp cumin seeds
- 1 bay leaf
- 1 tbsp garlic
- 2 green chilli - slitted
- 1/4 cup onion - finely chopped
- 2 tbsp mint leaves
- 1/2 cup corn - boiled
- 1/4 tsp turmeric powder
- 1/2 tsp garam masala powder
- salt to taste
PROCEDURE
- rinse rice in water for 4-5 times and then soak it in water for 20 minutes
- bring 5 cups of water to boil and add a tsp of oil
- once water starts to boil, add soaked rice and mix well
- cook the rice on medium flame until 85% of rice cooked
- drain the water and keep the cooked rice aside
- add spinach leaves in to the mixer grinder
- add little water and grind to a smooth puree, set aside
- heat oil in a pan
- temper with cumin seeds and bay leaf
- add chopped onion, garlic and green chilli
- saute well until transparent
- add boiled corn and mint leaves
- mix well and cook for 1-2 minute
- add spinach puree, turmeric powder, garam masala powder and salt
- mix well and cook for 1-2 minutes on low medium flame
- add cooked rice
- gently mix the rice with the masala
- cover and cook on low flame for 5-7 minutes or until the rice cooked thoroughly
- spinach rice ready to serve
- serve hot with onion raitha and papad
- taste was simply delicious
- add spinach leaves in any form, like pureed or chopped
- adjust spice level according to your taste
- you can also make this rice directly in the pressure cooker for 3 whistle
