HARA BHARA KABAB | STARTUP COOKING
Hara Bhara Kebab is basically a pan fried spiced patty made with a mixture of spinach, green peas and potatoes. It is a very healthy kebab as it has both spinach and green peas. It is the most staple vegetarian snack in most functions and celebrations.
Hara bhara kebab is one of the most popular vegetarian North Indian dish, it can be eaten as a starter, appetizer or a tea time snack. This recipe is simple to prepare and easy to make under 30 minutes.
Spinach and green peas mixture is blended with boiled potato, crumbs and corn flour. Potatoes acts as a binding agent. Ingredients like dry mango powder and chaat masala gives a fantastic flavor to these kebabs and asking for more after a bite.
These kebabs are crunchy on the outside and melt in the mouth on the inside. You can also cook these kebab in an air fryer or in the oven for healthier option.
This recipe is perfect for lunch boxes and its a great choice for fussy kids who don't eat greens. Its one of the traditional recipe, which is perfect for special occasions, festivals, pot lucks or any get-together.

RECIPE FOR HARA BHARA KABAB

INGREDIENTS
- 2 medium sized potato
- 2 cup spinach leaves - i used baby spinach
- 1 tsp oil
- 2 green chilli
- 1 inch ginger - chopped
- 1 cup green peas - fresh / frozen
- 1/4 cup coriander leaves
- 1 tbsp corn starch
- 1/2 tsp red chilli powder
- 1/2 tsp cumin powder
- 1/2 tsp chaat masala powder
- 1/2 tsp dry mango powder - amchur powder
- 1/4 cup bread crumbs - plain
- salt to taste
- 1/2 cup panko bread crumbs - optional
- 3 tbsp oil - for kebab
PROCEDURE
- boil 2 potatoes, peel off the skin and mash the potatoes or crumble the potatoes well using fork or grater
- bring water to boil in a sauce pan
- add spinach leaves, cook for 30 seconds and then switch off the flame, this is called blanching
- drain the water and wash the spinach leaves in cold water and set aside
- heat a tsp of oil in a pan
- temper with green chilli and chopped ginger
- saute for few seconds
- add fresh green peas and cook for 2 minutes
- once peas cooked well, add blanched spinach and cook in medium flame until all the moisture content evaporates
- when there is little or no moisture content, switch off the flame
- cool down the mixture at room temperature
- transfer into mixer grinder along with coriander leaves and grind to a smooth paste without adding water
- in a mixing bowl, add mashed potato, corn starch, cumin powder, red chilli powder, chaat masala powder, dry mango powder and salt
- mix well
- add ground paste and plain bread crumbs
- mix well together and it forms a nice dough
- pinch a small sized dough in your hand, make a ball, gently press and form a round pattie
- repeat the same process till dough is finished, i was able to get 12 patties out of this mixture
- spread panko bread crumbs in the plate and gently coat the crumbs in all the prepared patties
- keep in refrigerator for 30 minutes (optional) to set
- heat 3 tbsp of oil in a cast iron pan, place 3 patties one at a time
- cook on medium flame for 2 minutes, then flip over to other side and cook evenly
- patties should fry until light golden brown and crisp on both the sides
- healthy and tasty hara bhara kabab is ready, serve hot with tomato ketchup
- taste delicious
- adjust spice level according to your taste
- if you dont have corn starch, replace with besan flour or rice flour, works good
- adding panko bread crumbs is optional, it gives crispy outer texture
