This is my favorite brownie recipe. These fudgy brownies are crispy, crackly on top, rich and fudgy in the middle, loaded with lots of chocolate chips.
These brownies are made completely from scratch with step by step pictures. This homemade brownie recipe is easy to make and tastes much better than box mix brownies.
These brownies taste fudgy and chocolatey, really delicious! It tastes even great when served with scoop of vanilla ice cream and chocolate sauce.
Butter adds so much flavor to the brownies than oil. Here i used olive oil and butter, if you want more rich brownie replace oil with only butter.
Sugar balances the bitterness of unsweetened cocoa powder and adds to the brownie texture. It makes the centers soft and the tops crinkly.
Eggs add richness and provide structure to the brownies.
Salt and vanilla extract help to elevate the flavor of the brownies.
Why there is no baking powder or baking soda in the brownies ? Adding baking powder or soda lifts brownies up and creates a cake result. Here I am making a brownie which is so dense and fudgy, just one step up from eating chocolate.
How to check when brownies are done ? use a toothpick, stick it into the center and pull it out. If you see wet batter and few moist crumbs on the toothpick, the brownies are done. You don't want a clean toothpick!

INGREDIENTS
- 1/2 cup unsalted butter - softened at room temperature
- 2.5 cup semi sweet chocolate chips
- 2/3 cup all purpose flour
- 1/2 cup cocoa powder
- 1.5 tsp baking powder
- 1/2 tsp salt
- 4 eggs
- 1.25 cup granulated sugar
- 1 tbsp instant coffee granules
- 3 tbsp olive oil
- 1 tbsp vanilla extract
- 1/4 cup semi sweet chocolate chips - for garnish
PROCEDURE
- bring water to boil in the sauce pan
- in a small mixing bowl, add unsalted butter and semisweet chocolate chips
- place the bowl above the sauce pan (double boiler method) and cook on low flame
- whisk well
- once butter and chocolate chips melted, switch off the flame and set aside to cool at room temperature
- in another mixing bowl, add all purpose flour, cocoa powder, baking powder and salt
- mix well and set aside
- in another large mixing bowl, add 4 eggs, granulated sugar, coffee granules, olive oil and vanilla extract
- whisk well
- now add cooled chocolate mixture into the egg mixture, mix well the batter
- add flour mixture into the batter mixture
- fold well until just combined, do not over mix
- line a parchment paper in the square pan and slightly grease with butter on all the edges
- transfer the batter into the pan and tap twice
- garnish with semi sweet chocolate chips
- pre heat oven to 350 degree F
- bake for 35-38 minutes and a toothpick should comes out fudgy
- for soft and moist brownies, bake 40-45 minutes and a toothpick should comes out with moist crumbs attached
- cool down the fudge brownie completely and then cut into small pieces
- lip smacking, delicious fudgy brownie is ready to serve with a scoop of vanilla ice cream
- you can also use microwave to melt butter and chocolate
- store brownie in an airtight container at room temperature for 5 days
- adding cocoa powder and chocolate chips make these chocolatey without being overly sweet
