PLAIN SEV FOR CHAAT | PLAIN SEV RECIPE | STARTUP COOKING
Sev is a delicious crispy snack made from besan flour. It is usually made during Diwali festival to add in mixtures. Sev can also be used in many snacks and chaats. It is one of the best topping for most of the chaats.
Sev is a thin, crunchy noodles made from besan flour. The dough is made with besan flour, turmeric powder, red chilli powder, pepper powder, hing and salt. Then the dough will be pressed directly into the hot oil using sev maker and cook until crisp.
Plain sev should be very thin and it is also called as nylon sev, for this use the disc with very tiny small holes. Sev is mainly used in chaat recipes like aloo chaat, bhel puri, khakra chaat, ragda patties etc.,

RECIPE FOR PLAIN SEV

INGREDIENTS
- 2 cup bengal gram flour (besan flour)
- 1/4 tsp black pepper powder
- 1/4 tsp turmeric powder
- 1/2 tsp red chilli powder
- 1/8 tsp hing
- salt to taste
- 1 tsp oil - for dough
- water - as needed for making dough
- oil - for deep fry
PROCEDURE
- in a mixing bowl, add besan flour, turmeric powder, red chilli powder, hing, salt and pepper powder
- mix well
- add required amount of water and make a soft and smoooth dough
- add a tsp of oil and slightly knead the dough well, dough will be slight sticky, don't panic
- take sev maker and use the disc with small holes
- grease with little oil
- make a thick log of dough and add into the sev maker
- heat oil in a kadai
- when the oil is hot enough, drop the sev directly in to the oil by rotating the sev maker in a circular manner
- cook on medium flame until it becomes crisp and light brown
- deep fry the sev on both the sides until bubble ceases
- remove from the oil and drain the excess oil in paper towel
- repeat the same process for remaining dough
- cool down the sev completely and then break down the sev into small pieces
- store in an airtight container and use for all types of chaats

- adjust spice level according to your taste
- you can also add equal amount of rice flour and besan flour for more crispy sev
- just sprinkle the sev over the bhel puri, pani puri, poha, dhokla etc.,
