Bombay Sandwich


Bombay Sandwich is a delicious wholesome sandwich with fresh green chutney and thin layer of veggies layered between the bread. Bombay Sandwich is super quick and easy sandwich recipe and is a staple breakfast on weekends in my home. This Sandwich is loaded with  lots of vegetables and it can be a perfect breakfast or evening snack. 

This is a very tasty and delicious snack that can be made in less than 20 minutes,  if you have boiled potato and beetroot! Here I used sliced onion, tomato, cucumber, potato and beetroot, and you can also use boiled peas, carrot, corn, capsicum, sautéed mushrooms, shredded cabbage etc., and also you can add boiled eggs and shredded cooked chicken instead of veggies.

RECIPE FOR BOMBAY SANDWICH

Bombay Sandwich

INGREDIENTS

For Green Chutney
  • 1 cup coriander leaves
  • 1/2 cup mint leaves
  • 1 tbsp fried gram dal
  • 1/2 tsp cumin seeds
  • 2 green chilli
  • 1 garlic
  • 1/4 inch ginger
  • 1 tbsp lemon juice
  • salt to taste
For Sandwich
  • 4 bread slice
  • 3 tbsp unsalted butter, softened, at room temperature
  • 1 small potato - boiled - thinly sliced
  • 1 small onion - thinly sliced
  • 1 tomato - thinly sliced
  • 1 small cucumber - thinly sliced
  • 1/2 beetroot - boiled - thinly sliced
  • 1/2 tsp chat masala
  • 1/2 tsp cumin powder - optional
  • 1/4 tsp pepper powder - optional
  • salt to taste

PROCEDURE

  • boil potato and beetroot in a open pot or in a steamer. It should be firm and not soggy or mushy
  • thinly slice the onion, tomato, cucumber, potato and beetroot, set aside
  • in a mixer grinder, add coriander leaves, mint leaves, fried gram dal, cumin seeds, green chili, garlic, ginger, lemon juice and salt
  • grind to a smooth paste with a tbsp of water and green chutney is ready
  • green chutney should be thick and smooth, set aside
  • spread the butter on the bread, followed by green chutney and spread evenly
  • layer the veggies, onion, tomato, cucumber, potato and beetroot
  • sprinkle with salt, chat masala, cumin powder and pepper powder over the veggies
  • cover with another slice of bread
  • cut into triangles or squares with a knife
  • serve Bombay sandwich  immediately for breakfast or snack
  • taste is too good and refreshing
NOTES
  1. choose veggies of your choice, you can also use carrot, avocado, peas or corn
  2. Preferably use white bread for this recipe, also use any soft bread
  3. thinly slice the veggies so they can be neatly layered
  4. you can also use ketchup or cheese for toppings

add little water and grind to a smooth paste, green chutney ready


take 4 slice of bread


cut down the edges


spread unsalted butter on the bread


spread green chutney on the bread


add onion, tomato and cucumber slices and then sprinkle with chat masala powder, cumin powder, pepper powder and salt


cover with another slice of prepared bread and then add boiled potato and beetroot


again cover with another slice of bread


insert toothpick on the sandwich 


slice and serve
