Drumstick leaves / Moringa Leaves / Murungai Keerai is a wonderful green leaf variety with lots of health benefits. There are excellent sources of iron and calcium. It helps boost the immune system and increases breast milk production.
Drumstick leaves podi is a spicy powder prepared with fresh drumstick leaves, lentils and spices mixed together gives a nice aroma, flavorful and nutrition to the body. It is an excellent podi that is often mixed with hot steamed cooked rice with a little ghee. They are generally eaten with delicious breakfast like idli and dosa.

RECIPE FOR MURUNGAI KEERAI PODI

INGREDIENTS
- 1/2 cup bengal gram dal
- 2 tbsp Urad Dal
- 1 tsp cumin seeds
- 1 tsp pepper corn
- 3 tbsp coriander seeds
- 20 red chilli
- 1 tbsp garlic - chopped
- 2 cup drumstick leaves
- 1/8 tsp hing (asafoetida)
- salt to taste
PROCEDURE
- clean the drumstick leaves from the stalk and remove the yellow leaves
- dry roast the bengal gram dal, Urad Dal, cumin seeds, pepper corn, coriander seeds and red chillies separately
- add a drop of oil in the pan, dry roast the chopped garlic until the nice aroma comes and turns light brown, then keep aside
- add 2 cups of fresh drumstick leaves and roast it on very low flame until the moisture content evaporates and the leaves turns light and crisp
- allow all the roasted ingredients to cool at room temperature
- transfer into mixer grinder along with hing and salt
- grind to a fine powder
- store in an airtight container
- drumstick leaves podi ready to serve with idli, dosa and rice
- taste delicious
NOTES
- adjust spice level according to your taste
- you can sun dried the drumstick leaves rather than roasting in the flame
- store at room temperate and stays good for 2 months
- serve with hot rice drizzled with a tsp of ghee
- serve with idli and dosa with a tsp of sesame oil

dry roast bengal gram dal
dry roast Urad Dal, pepper corn and cumin seeds
dry roast coriander seeds
dry roast red chili
roast chopped garlic in a drop of oil
dry roast the drumstick leaves on very low flame until the moisture content evaporates and the leaves turns light and crisp
allow all the roasted ingredients to cool at room temperature
transfer into mixer grinder along with hing and salt
grind to a fine powder
store in an airtight container
serve with idli, dosa and rice
