FRIED IDLI RECIPE | MASALA IDLI FRY | STARTUP COOKING
Fried idli or Masala idli is very delicious, full of flavor, very easy to make and a quick recipe. It can be served as morning breakfast or a evening snack. This is truly vegan, gluten free and a perfect after school snack.
Fried Idli is a mildly spiced sautéed recipe made from idli. The idlis are fried till they are crispy and then tossed in curry leaves and other spices. Idli is a traditional South Indian Breakfast made from rice and Urad Dal. This recipe can be made either from fresh idlis or leftover idlis. Fresh idlis absorb more oil than the refrigerated idlis. Leftover idlis that have been refrigerated work better as they tend to hold their shape better when frying.

RECIPE FOR MASALA IDLI FRY

INGREDIENTS
To Grind
- 4 red chilli
- 4 garlic
- 1/2 tsp cumin seeds
- 1/2 tsp pepper corn
- 10 curry leaves
- 4 idli
- 1.5 tsp oil
- 1/2 tsp mustard seeds
- 1/2 tsp Urad Dal
- 7 curry leaves
- 1/4 tsp red chilli powder
- salt to taste
PROCEDURE
- take 4 idli and cut into small pieces
- in a mixer grinder add red chillies, curry leaves, cumin seeds, garlic and pepper corn
- grind to a coarse powder
- heat oil in a pan
- shallow fry the idli until they are crispy and light brown in color, traditionally the idli are deep fried
- once the idlis turn light brown, remove from the oil and set aside
- heat a tsp of oil in another pan
- temper with mustard seeds and urad dal
- saute for few seconds until it turns color
- add curry leaves and saute for few seconds
- add red chili powder and salt
- mix well
- add ground coarse paste
- mix well and cook for 1-2 minutes
- now add the fried idli
- toss well with the masala
- cook for 30 seconds on high flame
- switch off the flame
- serve hot as breakfast or as evening snack
- taste very delicious
- adjust spice level according to your taste
- you can use leftover idli
- for better results, keep the idlis in refrigerator for 1 hour
