EASY MUSHROOM RICE REICPE | MUSHROOM RICE | STARTUP COOKING
A tasty rice recipe with mushrooms. The mushroom rice is made in the traditional way of cooking on dum method using basmati rice in South Indian style. This mushroom rice tastes like Tamil Nadu "kuska" biryani. The cloves and cinnamon stick gives a nice flavor to the biryani and gives an excellent taste.
This biryani is so simple and easy to prepare without putting much effort. Button mushroom is a great choice for this recipe which is really good for our immunity. Mushrooms are very beneficial in reducing the risk of heart diseases and cancer, and also it contains lots of vitamins and minerals.

RECIPE FOR EASY MUSHROOM RICE

INGREDIENTS
- 1.5 cup basmati rice
- 1 tbsp ghee
- 2 inch cinnamon stick
- 3 cloves
- 2 cardamom pods
- 1 large onion - thinly sliced
- 1 tbsp ginger garlic paste
- 1 large tomato - ripe variety - chopped
- 4 green chilli - slit
- 1.5 cup mushrooms
- salt to taste
- 1/4 cup coriander leaves - chopped
PROCEDURE
- soak basmati rice in enough water for 30 minutes
- heat ghee in a pot
- temper with cloves, cinnamon stick and cardamom pods
- add thinly sliced onion
- saute well for few minutes until the onions are soft
- add ginger garlic paste and slit green chili
- saute well for few minutes until the raw smell goes
- add chopped tomato
- cook the tomatoes well until mushy
- add chopped mushrooms
- saute for 1-2 minutes
- now the mushrooms are started to shrink and it releases the water
- add 3 cups of water
- add salt and mix well
- bring water to boil
- add soaked rice
- mix well
- boil the rice over high flame for 3-4 minutes (the rice will drink most of the liquid and now the rice cooked almost to 60%-70%)
- garnish with chopped coriander leaves
- now bring the flame to low, cover with aluminum foil and then cover with lid, dum cook for 15 minutes
- switch off the flame and rest the pot for 10 minutes
- now open the pan and gently fluff up the rice
- mushroom rice ready to serve with raita
- taste is simply delicious
- you can cook the mushroom rice in pressure cooker for 3 whistle
- you can grind the green chillies along with ginger and garlic paste
