For Perfect Cupcake - measure your ingredients correctly! adding too much flour to the recipe is the most common mistake. Do not over mix the batter! For light and fluffy cupcake, mix until just combined. White vinegar is a necessity when it comes to red velvet cake and cupcakes. The reason you use vinegar is because it make the cupcakes even more red! if you don't have white vinegar replace with apple cider vinegar.

INGREDIENTS
RED VELVET CUPCAKES
- 1 cup all purpose flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- 1/4 cup unsalted butter - at room temperature
- 3/4 cup granulated sugar
- 1 egg
- 2 tbsp unsweetened cocoa powder
- 2 tbsp red food color - liquid
- 2 tsp vanilla extract
- 1 tsp white vinegar
- 1/2 cup buttermilk
CREAM CHEESE FROSTING
- 8 oz cream cheese, room temperature
- 1/4 cup unsalted butter, room temperature
- 1 cup confectioner's sugar
- 1/2 tsp vanilla extract
- sprinkles - your choice
PROCEDURE
- in a mixing bowl, mix all purpose flour, salt, baking soda and baking powder, set aside
- in another mixing bowl, add unsalted butter
- beat for 1 minute
- add granulated sugar and beat for another 30 seconds
- add an egg and beat for 2 minute on high speed until light and fluffy
- in another mixing bowl, add cocoa powder, red food color, vanilla extract and white vinegar
- mix well until it forms a thick paste
- now add buttermilk and slowly mix well
- add this paste to the butter mix (unsalted butter, granulated sugar and egg) and mix together
- then add into the flour mix
- mix everything just until combined (do not over mix)
- line a cupcake liners in mini cupcake pan
- fill cupcake liners about two thirds full
- pre heat oven to 350 degree F
- bake for 15 minutes or until a toothpick inserted in the center comes out clean
- cool the cupcake in the cooling rack before frosting
- For Cream Cheese Frosting: in the mixing bowl, whip cream cheese and butter on high speed for 2 minutes
- add confectioner sugar and vanilla extract
- whip on medium speed for 1 minute
- transfer to a frosting bag fitted with a frosting tip
- frost the cupcakes
- sprinkle with sprinkles of your choice
- serve immediately or store in refrigerator for 1 hour and then serve
- Red velvet cupcakes with cream cheese frosting are delicious
NOTES
- Don’t over mix the batter or else it turns too hard
- the amount of red food color is up to you, i added 2 tbsp to makes a deep, rich red
- for regular cupcakes, baking hour is 18-20 minutes, for mini cupcake bake hour is 12-14 minutes

mix well
take unsalted butter in another mixing bowl
beat for 1 minute
add granulated sugar and beat well
add egg
beat for 2 minutes on high speed until light and fluffy
in another mixing bowl, add cocoa powder, vinegar, red food color and vanilla extract
add buttermilk
mix well until it forms a thick paste
add the thick paste into the butter egg mix
mix well
now add into the flour mix
mix just until combined (do not over mix)
fill cupcake liners about two thirds full
pre heat oven at 350 degree F and bake for 20 minutes
for mini cupcakes, fill the batter in mini cupcake pan
bake for 12-15 minutes
cool all the cupcakes in the cooling rack before frosting
for frosting, add cream cheese and butter in mixing bowl
beat on high speed for 2 minutes
add confectioner sugar
add vanilla extract
beat for 1 minute
transfer to a frosting bag fitted with a frosting tip
frost the cupcakes
sprinkle with sprinkles
Delicious Red Velvet cupcakes are ready to serve
