Lauki ka halwa - a rich and creamy Indian dessert recipe prepared from grated bottle gourd, milk, sugar and chopped nuts.
Bottle gourd is also known as dudhi, ghiya or lauki. Bottle gourd is available in varying sizes and thickness. It has a smooth pale green skin, with white inner flesh and does not have a strong flavor of its own. But, it tastes great when you have it like a dessert.
Lauki ka halwa often made on Navratri or Maha shivaratri or ekadashi vrat. It's a perfect dessert for many people who follows a fast during this time. Bottle gourd does not take to cook very longer and its very simple to make and made in less than 30-40 minutes.
In the restaurants, they use khoya to provide a pleasant rich and creamy consistency of the halwa. This lauki ka halwa may also be prepared with condensed milk also, it enhances the flavor and the texture when it's consumed warm. In party's usually this halwa serves with vanilla or pistachio ice cream.

RECIPE FOR LAUKI KA HALWA

INGREDIENTS
- 2 medium sized bottle gourd
- 1.5 cup milk
- 1/4 cup sugar
- 1/4 cup ghee
- 1/4 tsp cardamom powder
- 1 tbsp almonds - chopped
- 1 tbsp pistachios - chopped
PROCEDURE
- bring milk to a boil until it reduces and thickens slightly
- meanwhile, wash the bottle gourd well, peel the skin and discard it
- scoop out the seeds and discard it
- grate the bottle gourd using grater
- heat 2 tbsp ghee in a pan
- add grated bottle gourd
- saute in a medium flame until it reduces the moisture content and bottle gourd shrinks slightly, this process takes about 10-12 minutes
- pour the hot milk to the bottle gourd and mix well
- cook on a medium flame until the bottle gourd gets cooked completely and the whole mixture thickens
- add sugar and mix well
- continue to cook on medium flame, sugar starts to melt, keep stirring and cook until the bottle gourd halwa turns thick and it forms like a mass
- add cardamom powder and the remaining ghee
- mix well and cook for 1 minute
- add 1 tbsp chopped nuts and mix well
- switch off the flame
- transfer to a bowl
- garnish with some remaining chopped nuts
- serve hot or chilled
- taste delicious

NOTES
- once grated the bottle gourd, add immediately into the pan and start cooking, or else it will change color to brown
- to reduce the cooking time add condensed milk instead of sugar
- keep stirring continuously until the halwa ready, or else the bottle gourd will stick to the bottom and turns brown
