RECIPE FOR KOLLU PODI

INGREDIENTS
- 1 tsp oil
- 1/2 gram horsegram
- 2.5 tbsp bengal gram dal
- 10 cloves
- 6 red chilli
- 1 spring curry leaves
- 1/4 tsp hing
- salt to taste
PROCEDURE
- heat oil in a pan
- dry roast Horsegram until you get a nice aroma, set aside
- add bengal gram dal and roast till light brown, set aside
- dry roast red chillies and set aside
- add garlic and saute for a minute, set aside
- add curry leaves and saute for few seconds till it turns crisp
- transfer all the roasted ingredients into mixer grinder along with hing and salt
- grind to a slight coarse powder
- cool down and store in an air tight container
- kollu podi ready to serve with idli, dosa and rice

NOTES
- store at room temperate and stays good for 2 months
- serve with hot rice drizzled with a tsp of ghee
- serve with idli and dosa with a tsp of sesame oil

STEP-BY-STEP PHOTO RECIPE
dry roast Horsegram dal until you get a nice aroma, set aside
dry roast bengal gram dal until it turns light brown, set aside
dry roast garlic for few minutes
dry roast red chillies
dry roast curry leaves till it turns crisp
transfer all the roasted ingredients into mixer grinder
add hing and salt
grind to a slight coarse powder
store in an air tight container
