Dates and nuts ladoo are delicious and healthy snack made by combining ground dates and dry fruits roasted in ghee. Dates are also called as "Khajoor" in Hindi. We can call this ladoo as sugar free ladoo, dry fruits ladoo, khajoor ke ladoo.  It's a perfect snack to pack for your kids lunch box or have it as evening snack.

Though am not a big fan of dates, I like to sugar substitute in my smoothies. Dates ladoos are vegan and gluten free. It is also suitable for people who are allergic to gluten or avoiding gluten in their diet. It's hard to eat just one! This is a quick and easy recipe and made under 20 minutes.

Every bit of these dates nuts ladoos is filled with health and nutrition. Dates are rich source of proteins, vitamins, iron and minerals. They are instant energy providers because of their natural sugars, also called as energy balls.

RECIPE FOR DATES NUTS LADOO

INGREDIENTS

  • 1 tbsp ghee + 1 tsp
  • 1/4 cup cashews - chopped
  • 1/4 cup almonds - chopped
  • 1/4 cup walnuts - chopped
  • 1/4 cup pistachios - chopped
  • 1.5 cup dates

PROCEDURE

  • heat a tbsp of ghee in a pan and add cashews, almonds, walnuts and pistachios
  • roast for 5 minutes in low flame or till nuts turns crunchy and set aside
  • add 1.5 cup seedless dates in a blender or food processor
  • grind to a coarse paste without adding water
  • heat a tsp of ghee in a pan
  • add grounded coarse paste
  • fry in low medium flame for few minutes and smash the dates with a spatula
  • add roasted nuts into the dates and mix well
  • cook in low flame for 1 minute and then switch off the flame
  • cool for a minute, then immediately start making ladoos (do not cool completely, or else you wont be able to make ladoos)
  • grease hand with a tsp of ghee
  • take a small portion from the dough and make small balls
  • make ladoo like this way with all of the dough
  • delicious dates nuts ladoo ready to serve
  • store  the dates ladoo in an air tight container

NOTES

  1. you can choose any nuts of your choice, use poppy seeds, dry coconut and sesame seeds
  2. do not cool completely once your roasted all the ingredients, try to make ladoos immediately
  3. store in an airtight container and store up to 1 month

DATES NUTS LADOO WITH STEP BY STEP PHOTO RECIPE



heat ghee in a pan


add chopped nuts


roast for 5 minutes in low flame


nuts turns little crunchy


transfer to a plate and cool down


add seedless dates in a food processor 


grind to a slight coarse paste


heat a tsp of oil in a pan


add ground seedless dates


smash the dates with a spatula


roast in low medium flame for 5 minutes


add chopped nuts


mix altogether

grease hands with ghee and start making the balls
