SESAME POWDER FOR IDLI AND DOSA | ELLU PODI | STARTUP COOKING
Ellu podi or Sesame seed powder - a flavorful South Indian spiced lentil powder using sesame seeds. This simple podi recipe has sesame seeds along with urad dal and bengal gram dal with red chillies and curry leaves, is perfect side dish for Idli, Dosa and Uthappam.
Sesame seeds are packed with nutrients and roasting the seeds itself give a nice aroma and flavor to this recipe. Ellu has lots of health benefits as well.. Sesame seeds are rich in calcium and iron. They are also a great source of minerals like magnesium, copper and zinc.

RECIPE FOR ELLU PODI

INGREDIENTS
- 1/2 cup urad dal
- 1/4 cup bengal gram dal
- 1 cup sesame seeds (white or black)
- 8 red chilli
- 2 kashmiri red chilli
- 1 spring curry leaves
- 1/8 tsp hing
- salt to taste
PROCEDURE
- dry roast urad dal till golden brown, set aside
- dry roast sesame seeds till it pops up and light golden brown, set aside
- dry roast bengal gram dal till golden brown, set aside
- dry roast red chill and Kashmiri red chili
- add curry leaves and roast until its crisp
- cool down completely
- transfer the ingredients into mixer grinder
- add hing and salt
- grind to a slight coarse powder
- cool down completely and store in an airtight container
- Enjoy with Idli and Dosa
- you can replace white sesame seeds with black sesame seed
- mix with sesame oil, tastes great with idli and dosa
- stays good for 15-20 days
