KURKURI BHINDI | CRISPY OKRA FRY | STARTUP COOKING
Kurkuri Bhindi also known as Okra Fry from Punjabi cuisine. Kurkuri bhindi is traditional North Indian delicacy, which can be served as a healthy alternative to the potato fries.
Okra is a rich source of folate and fiber and many more health benefits of this vegetable. The most amazing thing about this recipe is that you can also serve it as a starter with a choice tomato ketchup, curd or mayonnaise.
Kurkuri bhindi is easy to prepare and made with okra coated with red chili, coriander, cumin powder, besan and rice flour and salt. RECIPE FOR KURKURI BHINDI

INGREDIENTS
- 400 g okra (bhindi or lady finger)
- 1/8 tsp turmeric powder
- 1/2 tsp red chilli powder
- 1/2 tsp coriander powder
- 1/4 tsp cumin powder
- salt to taste
- 1 tbsp besan flour (chickpea flour)
- 1.5 tsp rice flour
- 1.5 tsp water to sprinkle
- oil for frying
PROCEDURE
- rinse the okra in water and dry with a kitchen towel
- cut both the ends and discard it
- slice the okra vertically in to 4 pieces, taken into bowl
- add turmeric powder, red chili powder, coriander powder, cumin powder, salt, chickpea flour and rice flour
- mix well and sprinkle a tsp of water and evenly coat the spices to all over the okra
- marinate the okra mix for 20 - 30 minutes in room temperature
- heat oil in a frying pan
- add a batch of marinated okra and fry evenly on medium flame
- fry the okra till golden brown and crisp
- remove the fried okra from the oil and drain the excess oil in kitchen paper towel
- continue the same process with remaining marinated okra
- serve kurkuri bhindi with tomato ketchup or with green chutney or with thick curd

NOTES
- you can add more or less spice powders to make okra fry
- you can bake kurkuri bhindi rather than frying
- serve as a evening snack on a rainy day
