ONION TOMATO PEANUT CHUTNEY | STARTUP COOKING
Peanut chutney is a super, creamy, slightly sweet, mildly spiced, served with dosa and a very popular recipe from the southern India. This chutney is quick, healthy and delicious. This recipe is easy to make, simply fry all the ingredients with a tsp of oil and grind to a smooth paste.
Myself and my son are pretty much in love with peanut recipes, peanut chutney is one among them. And as always, this chutney is quick and easy. If you want, make a large batch, and keep it for a few days in the refrigerator so that you can enjoy with your south Indian breakfast every day.

RECIPE FOR ONION TOMATO PEANUT CHUTNEY

INGREDIENTS
- 1/3 cup raw peanuts
- 1.5 tsp oil
- 9 shallots
- 3 garlic
- 1/2 tsp ginger
- 1/4 cup chopped tomato
- 3 green chili
- 2 red chilli
- 1/4 cup water
- salt to taste
- 1 tsp oil for seasoning
- 1/2 tsp mustard seeds
- handful of curry leaves
PROCEUDRE
- dry roast peanuts in medium flame till it changes the color, keep it aside
- add 1.5 tsp oil in a wok
- add shallots, garlic and ginger
- saute well
- add tomato and green chilli, saute well till it turns mushy
- add red chilli and saute for few seconds
- add roasted peanuts
- mix altogether and saute for 30 seconds to 1 minute
- cool down to room temperature
- transfer into mixer grinder
- add salt
- grind to a smooth paste, adding little water
- transfer into serving bowl
- heat a tsp of oil in a pan
- add mustard seeds and allow to crackle
- add curry leaves and allow to turn crisp
- add seasoning over the peanut chutney
- onion tomato peanut chutney ready
- goes well with dosa and chapathi
- don't discard peanut skin after roasting
- if need grind to a slight coarse paste
- shallots is preferable, if don't have add 1/4 cup regular onion
