DRUMSTICK LEAVES STEW | MURUNGAKEERAI KOOTU | STARTUP COOKING
Drumstick leaves / Moringa Leaves / Murungai Keerai is a wonderful green leaf variety with lots of health benefits. There are excellent sources of iron and calcium. It helps boost the immune system and increases breast milk production.
Drumstick leaves stew (Murungai Keerai paruppu) is an excellent lentil stew rich in vitamins, proteins etc., This recipe is from South Indian especially Tamil Nadu cuisine. It is a soft lentil stew made with moong dal cooked in drumstick leaves and mixed together in coconut paste.

RECIPE FOR DRUMSTICK LEAVES KOOTU

INGREDIENTS
To Pressure Cook
- 1/3 cup moong dal
- 1/4 tsp turmeric powder
For Seasoning
- 1.5 tbsp sesame oil
- 1/2 tsp mustard seeds
- 1 tsp urad dal
- 1 red chilli
- 1 spring curry leaves
- 1 small onion - finely chopped
- 1 small tomato - finely chopped
- 2 cup drumstick leaves - chopped (optional)
For Grind
- 1/3 cup grated coconut
- 2 green chilli
- 1/2 tsp cumin seeds
PROCEDURE
- take the moong dal in a bowl, wash well
- add 1 cup water
- add turmeric powder and salt
- place the bowl in pressure cooker. pressure cook the dal for 3 whistle, or till the dal becomes soft and mushy, mash the dal well
- wash drumstick leaves thoroughly and keep it aside
- take grated coconut, cumin seeds and green chilli in mixer grinder
- add little water and grind to a smooth paste, keep it aside
- heat oil in a wok
- add mustard seeds, allow to crackle the seeds
- add urad dal and fry well it changes the color
- add hing, red chili and curry leaves
- add finely chopped onion, saute well till they turn translucent
- add chopped tomato and saute well
- add drumstick leaves and saute well for 1 minute in medium flame
- add mashed moong dal and half cup water
- cook for 2 minutes
- add coconut paste
- mix well
- adjust the salt if needed
- cook the Kootu for 30 seconds to 1 minute and then switch off the flame
- Drumstick Leaves Kootu or Murungai Keerai Kootu ready
- serve with hot steamed rice !
NOTES
- can replace moong dal with toor dal
- don't cook the drumstick leaves more than a minute or else the taste will differ
- after adding coconut paste, cook less than a minute, then immediately switch off the flame
- taste great with potato fry or any vegetable fry
Drumstick Leaves Kootu with Step-By-Step Photo Recipe
take moong dal in a bowl, wash well
add 1 cup water and little turmeric powder and place the bowl in pressure cooker
pressure cook dal for 3-5 whistle
dal cooked well
mash the dal well, keep it aside
heat oil in a wok, add mustard seeds and allow to crackle
add urad dal, hing and curry leaves, saute for few seconds
add red chilli and saute well
add finely chopped onion
saute well till the onion turn translucent
add chopped tomato
saute well till it turn mushy
add cleaned drumstick leaves
saute the leaves for 1 minute in medium flame
add cooked and mashed dal
add grated coconut, green chilli and cumin seeds in mixer grinder
add little water and grind to a smooth paste
add coconut paste
mix well and cook for 30 seconds to 1 minute
switch off the flame
