Punugulu is a popular Andhra snack from Andhra cuisine with Idli Dosa batter. Punugulu is a common street food or an evening snack in Andhra Pradesh. The consistency of the batter should be thick and soft. Add chopped onion, green chilli, coriander leaves, baking soda and salt with batter. For more crispy Punugulu, add rice flour and rava (semolina) to the batter. It should be crispy on the outside and soft on the inside.

PUNUGULU VIDEO RECIPE
INGREDIENTS
- 1.5 cup thick idli batter
- 1.5 tbsp rava
- 1 tbsp rice flour
- 2 green chili - chopped
- 1 inch ginger - chopped
- 2 tbsp coriander leaves - chopped
- 1/4 onion - chopped
- 1 tsp cumin seed
- salt to taste
- 1/8 tsp baking soda
- oil for frying
PROCEUDRE
- Take thick idli batter in a mixing bowl
- add rava and rice flour
- add chopped green chili, ginger, coriander leaves and onion
- add cumin seed, salt and baking soda
- mix well
- should be thick flowing batter
- pinch gooseberry size batter and drop in hot oil one by one
- cook on medium flame
- fry on both the sides, until they are golden brown
- drain off Punugulu on to kitchen towel to remove excess oil
- serve hot with coconut chutney
- its so crispy
- serve as evening snack with a cup of tea or coffee
