YELLOW PUMPKIN KOOTU | PUMPKIN KOOTU WITH PEANUT AND COCONUT | STARTUP COOKING
Yellow pumpkin also known as manjal poosanikai or parangikai. Kootu is a South Indian style recipe prepared with dal, vegetable and ground coconut. Today, I have prepared this kootu with yellow pumpkin. This kootu goes well with puli Kuzhambu or kara kuzhambu.
We can also pair this kootu with Dosa, Chapathi or Parotta. In this kootu, I added roasted peanuts along with grated coconut, which gives more taste than the regular kootu. RECIPE FOR PUMPKIN KOOTU

INGREDIENTS
To Pressure Cook
- 1/4 cup toor dal
- 2 cup pumpkin - chopped
- 1/4 tsp turmeric powder
To Grind
- 1/4 cup grated coconut
- 1 tbsp roasted peanuts
- 1/3 tsp pepper corn
- 3 red chilli
To Season
- 1 onion - chopped
- 1 tomato - chopped
- 1 inch ginger - chopped
- 1 tbsp oil
- 1/4 tsp mustard seeds
- 1 spring curry leaves
- 1/4 cup coriander leaves - for garnish
PROCEDURE
- remove the skin and chop the pumpkin into cubes and add into the sauce pot
- rinse the the toor dal with enough water and add into the sauce pot
- add 1 cup water
- add 1/4 tsp turmeric powder and mix well
- pressure cook for 2-3 whistle
- in a mixer grinder, add grated coconut, roasted peanuts, pepper corn and red chilli
- add little water and grind to a smooth paste and set aside
- add oil in a pan
- temper with mustard seeds and curry leaves
- add chopped ginger and saute well
- add finely chopped onion and saute well until translucent
- add chopped tomato, saute well till it turn mushy
- add grounded paste into cooked pumpkin and dal
- mix well
- add onion, tomato seasonings into the dal
- mix well
- bring pumpkin kootu to boil for 1 minute
- switch off the flame
- garnish with coriander leaves
NOTES
- yellow pumpkin is best for this kootu
- use peanuts for tasty kootu or can replace with sesame seeds
- can cook toor dal and pumpkin separately
- pumpkin cook very fast than the toor dal
- goes well with chapathi, dosa and rice

PUMPKIN KOOTU WITH STEP-BY-STEP PHOTO RECIPE
wash toor dal twice and add 1 cup water
add chopped pumpkin
add turmeric powder
place in pressure cooker
pressure cook for 2-3 whistle
pumpkin and dal cooked well
take roasted peanuts in mixer grinder
add grated coconut, pepper corn
add red chili
add little water and grind to a smooth paste
heat oil in a pan, add mustard seeds, allow to splutter
add curry leaves, allow to turn crisp
add chopped onion
saute well
add chopped tomato and ginger
saute well till it turn mushy
add grounded paste in to cooked pumpkin and dal
add salt
add sautéed onion and tomato mix
mix well
bring the kootu to boil for 1-2 minute
switch off the flame
serve hot with chapathi, dosa and rice
