RECIPE FOR DOBLE KA MEETHA

INGREDIENTS

For Rabri

  • 1 litre whole milk
  • 1 cup sweetened condensed milk
  • 1 pinch of saffron strands
  • 1/2 tsp cardamom powder

For Sugar Syrup

  • 1/2 cup sugar
  • 1/2 cup water
  • 1/4 tsp saffron threads
For Serving
  • 6 slice white bread or any other bread
  • 4 tbsp ghee
  • 1/4 cup nuts (almonds and pistachios) - chopped
PROCEDURE
  • add sugar and water in a pan
  • stir well
  • dissolve the sugar completely
  • boil for 3-4 minutes or until the syrup thickens, switch off the flame
  • take 6 bread slices
  • cut the sides of bread and cut into desired shape, like triangle, square or rectangle
  • heat ghee in a tawa
  • fry the bread slices in hot ghee
  • fry the bread on both the sides, until it turns golden brown
  • dip fried bread in prepared sugar syrup
  • repeat with remaining bread slices
  • in a plate, pour some prepared Rabri, place the fried and sugar syrup dipped bread
  • garnish with 2 tbsp of Rabri and chopped nuts
  • delicious Double ka Meetha ready

NOTES
  1. you can use any kind of bread
  2. replace ghee with oil for frying the bread
  3. to make the dessert richer, add some cream to the milk  when boiling
  4. you can also add some saffron in sugar syrup for additional flavour
  5. great recipe for Diwali and other festival occasions
  6. serve hot or cold

DOUBLE KA MEETHA WITH STEP-BY-STEP PHOTO RECIPE


add whole milk in large pan


bring milk to boil, stir occasionally, otherwise milk will stick to the bottom of the vessel



add sweetened condensed milk



mix well



bring milk to boil and boil in medium flame



soak saffron in 1 tbsp of milk


a layer of cream is formed over the milk, stick the cream to sides of the vessel


bring milk to boil again


repeat, collecting of cream to sides of the pan for at least 3-5 times or till milk reduces to one-third



add saffron milk



add cardamom powder


mix well and scrape off the collected cream from sides of the pan


bring milk to boil in low flame



cook for 1 minute and switch off the flame



consistency should be thick and flowing



transfer in to serving bowl, Rabri ready




take 6 bread slices


add sugar in a pan


add water in a pan


stir well and dissolve the sugar completely


bring the syrup to boil for 3 minutes or until it thickens


sugar syrup ready


add ghee in a pan



cut the sides of the bread and then cut into desired shape


add bread slice into the hot ghee


fry the bread on both the sides or until it turns golden brown


then add into the sugar syrup


dip in sugar syrup on both the sides


take a plate, add some Rabri, then place the fried and sugar dipped bread, garnish with a tbsp of Rabri and chopped nuts
