PALAK PARATHA / SPINACH PARATHA RECIPE | STARTUP COOKING
Palak Paratha is a healthy and delicious flatbread recipe prepared with lots of spinach, wheat flour and with some Indian spices. This dish is vegan and perfect for breakfast and lunch.
Spinach is a leafy green vegetable that belongs to the amaranth family. It is considered very healthy and its loaded with lots of nutrients and antioxidants. Eating spinach everyday may benefit eye health, reduce oxidative stress, reduce blood pressure levels and helps to prevent cancer.
Spinach is an extremely nutrient rich leaf. It packs with high amounts of carotenoids, vitamin C, vitamin K, folic acid, iron and calcium. This palak paratha is often served with plain yogurt, pickle, paneer or mushroom curry. This is my all time favorite comfort food, i have always loved its taste, texture and qualities of being easy on the stomach.
Parathas are very common in Indian cuisine. This recipe is easy to prepare and quick to serve with basic ingredients from the home. Also, this paratha is perfect for lunch boxes and its a great choice for fussy kids who don't eat green leaves.

RECIPE FOR SPINACH PARATHA

INGREDIENTS
For Puree :
- 3 cup spinach leaves
- 3.5 cup water
- 1 green chilli
- 1 inch ginger
For Dough :
- 2 cup wheat flour
- salt to taste
- 1/2 tsp ajwain seeds
- 1/4 tsp garam masala powder
- water as needed
- 2 tsp oil
For Paratha :
- 1/4 cup wheat flour for dusting
- 1 tsp ghee/oil for making paratha
PROCEDURE
- bring water to boil in a sauce pan and add washed spinach leaves in the boiling water
- cook the spinach leaves for 30 seconds to 1 minute and then switch off the flame
- drain the excess water and cool down the spinach completely at room temperature
- transfer the wilted spinach into the mixer jar along with green chilli and ginger
- grind to a smooth puree without adding any water and keep it aside
- in the large mixing bowl, add wheat flour, salt, ajwain seeds and garam masala powder
- mix well without any lumps and then add prepared spinach puree
- combine well and add required amount of water to make a soft and smooth dough
- grease the dough with a tsp of oil and knead the dough well
- cover the dough with kitchen towel and rest it for 20 minutes
- pinch a medium sized ball dough, add some flour, roll and make a round circle using the rolling pin
- place the prepared paratha in the hot tawa
- add a tsp of oil on top of the paratha and spread to all over the sides and cook for a minute
- then flip over the paratha to other side and cook evenly or until the golden brown spots appear on them
- repeat the same process with the remaining dough
- serve spinach paratha with raitha, pickle, paneer curry or any other vegetable curry
- taste delicious
NOTES
- adjust salt and spices according to your taste
- instead of spinach puree, you can also use finely chopped spinach for making palak paratha

SPINACH PARATHA WITH STEP-BY-STEP PHOTO RECIPE
bring water to boil in a sauce pan
add washed spinach leaves
cook for 30 seconds - 1 minute
drain the water and cool down completely
add spinach leaves into mixer grinder
add green chilli and ginger
grind to a smooth puree without adding any water, keep it aside
take 2 cup wheat flour in a bowl
add salt, ajwain seeds and garam masala powder, mix well
add spinach puree
combine well
add enough water
make a soft and smooth dough
add oil and knead well
cover with kitchen towel and rest for 20 minutes
pinch a medium sized ball dough
flatten the dough and dust with some wheat flour
