These are not too sweet, which lends to the favor of the fruit in this muffin. Sprinkle sugar on top of muffins before baking for a sweeter top. I prefer fresh blueberries rather than the frozen one. If you are using frozen blueberries add without thawing, otherwise they will turn the muffins purple! Blueberries are one of the healthiest fruits out there. They are super high in antioxidants, low in calories, fat free, a good source of fiber, sweet, delicious and irresistible. This is one of the easiest breakfast recipe to be served in morning hours. RECIPE FOR BLUEBERRY WALNUT MUFFIN

INGREDIENTS
  • 1 cup wheat flour
  • 3 tbsp sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 1/2 cup mik
  • 2 tbsp vegetable oil
  • 1/2 cup blueberries
  • 1/4 cup walnuts - chopped
PROCEDURE
  • in a mixing bowl, mix wheat flour, baking powder and salt, keep it aside
  • take 1 egg in a separate bowl and beat well
  • add sugar and whisk well until sugar dissolves completely
  • add milk and oil
  • mix well
  • take blueberries in another bowl
  • sprinkle a tsp of wheat flour and toss well
  • pour the egg mixture into the flour mixture
  • mix well until the flour mixture is just moistened
  • add blueberries and chopped walnuts
  • combine altogether
  • line up muffin liners in a baking pan
  • preheat oven to 375 degree F
  • scoop out the batter and fill the muffin cup up to 3/4th
  • sprinkle a tsp of sugar on top of the muffin cups and chopped walnuts
  • bake for 15-20 minutes
  • cool in the pan for 10 minutes before removing to cool completely on a wire rack
  • yield about 6 muffin totally

BLUEBERRY WALNUT MUFFIN WITH STEP-BY-STEP PHOTO RECIPE


take 1 cup wheat flour in a bowl


add baking powder


add salt


mix well and keep it aside


take egg in a bowl


whisk well


add sugar


mix well until the sugar dissolves completely


add milk


add oil


mix well


take blueberries in a bowl


sprinkle a tsp of flour


toss well


add egg mixture into the flour mixture



combine well


add blueberries


add chopped walnuts


combine altogether


line up muffin liners in a baking pan


scoop out the batter and fill the muffin cup up to 3/4th


sprinkle a tsp of sugar on top of the muffin cups



preheat oven at 375 degree F


bake for 15-20 minutes
