Barley, the ingredible grain is used rarely in everyday cooking. Trust me, there are lots of recipes and delicious dishes we can make using barley. Barley has many health benefits, they are rich in fibre, reduces hunger and may help you lose weight. Actually, it has soluble and insoluble fiber content improves digestion and it reduces heart diseases. Barley water helps to flush toxins and keep your digestion regular. Here I made the barley dosa with barley and foxtail millet. You can replace the millet with idli rice. Refrigerate the batter for 2-3 days only, otherwise it will give sour taste. RECIPE FOR BARLEY DOSA

INGREDIENTS
- 1 cup barley
- 1 cup foxtail millet
- 1/2 cup urad dal
- 2 tbsp poha
- salt to taste
- water to grind
- 1 tsp oil to make dosa
PROCEDURE
- in a mixing bowl, add barley, foxtail millet, urad dal and poha
- wash all the ingredients in water for 3 times
- soak the dal in water for 5 hours
- drain the water
- grind to a smooth paste in grinder by sprinkling little water
- transfer batter to a bowl
- add salt
- mix well
- close with lid
- allow the batter to ferment for 8 hours or overnight
- once batter is fermented, mix well
- heat a cast iron pan
- pour a ladle full of batter and spread in a circular motion
- drizzle a tsp of oil around the edges
- cover with lid and cook on medium flame or until the edges turns golden brown
- flip the dosa to other side
- cook for few seconds
- serve hot with coconut chutney or tomato chutney

Notes:
- replace the foxtail millet with idli rice
- grind the batter in mixie also
- store the remaining batter in refrigerator for 2-3 days (otherwise it gives sour taste)
- add onion and green chillies for the tasty dosa
BARLEY DOSA WITH STEP-BY-STEP PHOTO RECIPE
take barley in a mixing bowl
add foxtail millet
add urad dal and poha
wash well in water for 3 times
soak in water for 8 hours
soaked well
add into the wet grinder
grind to a smooth paste by sprinkling little water
batter should be smooth paste
transfer the batter into the bowl
add salt
mix well and allow to ferment for overnight or 8 hours
fermented batter
mix well
heat a cast iron pan (recommended for crispy dosa)
pour a ladle full of batter and spread in a circular motion
drizzle a tsp of oil and cover with lid, cook on medium flame or until the edges turns color
barley dosa ready
serve with coconut chutney or tomato chutney, tastes great
