Blueberry loaf cake is so easy and a delicious cake, which is so soft, moist and loaded with fresh blueberries. This cake is always perfect for morning breakfast with a cup of milk and evening snack. We always look forward to summer, when fresh blueberries appear in the local farms. You can use fresh or frozen and you don't have to thaw them before making this cake.

BLUEBERRY LOAF CAKE RECIPE

INGREDIENTS
- 1 cup blueberry + 2 tbsp
- 6 tbsp unsalted butter - melted
- 3/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 cup yogurt/curd
- 1.5 cup all purpose flour + 2 tbsp
- 3/4 tsp baking powder
- 1/4 tsp salt
- 1/4 cup milk
PROCEDURE
- in a mixing bowl, take melted butter, add sugar and vanilla extract
- mix well till the sugar is dissolved completely
- add yogurt and whisk well
- add baking powder, salt and all purpose flour
- mix well and it forms a goey paste
- add milk and adjust the batter
- in another mixing bowl, add blueberries and toss with 2 tbsp flour
- add into the batter and combine well
- grease a loaf pan with butter or a parchment paper
- add the batter into it and tap it
- decorate with some blueberries
- preheat oven at 350 degree F.
- Bake for 40 - 45 minutes
- cool completely
- cut and serve with a cup of hot Tea/Coffee

Blueberries
