Roomali Roti
Roomali Roti or Rumali Roti is a thin flatbread from India and Pakistan. It is mostly prepared in the region of Punjab. The word "Rumal" means handkerchief and the name Roomali Roti means Handkerchief Bread.


Traditionally, this roti is made in a large inverted wok over a tandoori and it is cooked over that. Rumali Roti is very soft and thin and this roti can be folded like handkerchief.

RECIPE FOR ROOMALI ROTI

Roomali Roti

INGREDIENTS
  • 1 cup all purpose flour
  • 1/2 cup maida
  • salt to taste
  • 1 tbsp oil
  • 1 cup warm water or as needed
To Prepare Salt Water
  • 1/4 cup water
  • 1/4 tsp salt
To Make Roti 
  • 1/4 cup all purpose flour
  • 1 tsp oil to make single roti
PROCEDURE
  • in a mixing bowl, mix all purpose flour, wheat flour, salt and oil
  • add warm water little by little, then start making a dough
  • knead well for 5 minutes to make soft and smooth dough
  • cover with lid or moist cloth 
  • rest the dough for 30 minutes
  • pinch a small sized ball dough
  • roll it into a thin circular shape using rolling pin and also dust with all some purpose flour
  • roll as thin as possible
  • in the mean time, mix 1 cup water and 1 tsp salt
  • now salt water ready
  • heat a wok/kadai for 1 minute, then flip the wok/kadai and heat in a medium flame
  • sprinkle salt water all over wok/kadai
  • now gently place the rolled roti over hot wok/kadai
  • cook for 30 seconds, you can see bubbles forming over roti
  • then flip over to other side 
  • gently press the roti with kitchen towel, golden brown spots will appear
  • remove from wok/kadai
  • fold the roti like handkerchief
  • Roomali Roti Ready
  • serve hot with any curry of your choice

Roomali Roti With Step-By-Step Photo Recipe


in a mixing bowl, take all purpose flour


add wheat flour


add salt


add 1 tbsp oil


add required amount of warm water to make dough


knead well to make soft and smooth dough
then cover the dough with moist cloth


pinch a small sized ball dough

dust with some flour

roll as thin as possible using rolling pin



prepare salt water (salt+water)


mix well (salt water ready)


heat a wok for 1 minute, then invert the wok and heat in a medium flame


sprinkle salt water


gently place the rolled roti over hot wok


press gently, cook for 30 seconds, you can see bubbles forming over roti


flip over to other side, cook for 30 seconds and golden brown spots will appear

continue with the remaining dough. Fold the roti like handkerchief

serve hot with any paneer gravy. Tastes Good.
