RECIPE FOR POTATO PODIMAS

INGREDIENTS
- 3 medium size potato
- 2 tbsp oil
- 1/2 tsp mustard seed
- 1 tsp urad dal
- 1 tsp bengal gram dal
- 1/4 tsp hing/asafoetida
- 1 spring curry leaves
- 1/4 tsp turmeric powder
- 1 tbsp sambar powder
- salt to taste
PROCEDURE
- wash potato thoroughly
- peel the skin and discard it
- finely chop the potatoes and keep it aside (or soak the chopped potatoes in water until cook)
- heat oil in a cast iron wok
- add mustard seeds and allow to crackle
- add urad dal, bengal gram dal and hing
- saute for few seconds
- add curry leaves and allowed to turn crisp
- add chopped potatoes
- combine well with the seasonings
- add turmeric powder, sambar powder and salt
- mix well
- cover and cook in low flame until cooked well
- potatoes turn slight crispy
- serve with curd rice or any of your favorite rice
- potato podimas tastes very delicious 😋
Note:
- Do not add any water
- to get more crisp, cook in low flame

take 3 medium size potato
take 3 medium size potato
heat oil in a cast iron wok
