Potato Podimas is easy and simple side dish loved by all, especially the kids. This recipe is easy to prepare in 15 minutes without boiling the potato. Simply, stir fry the chopped potato in sambar powder or chili 🌶 powder in very little amount of oil to make this yummy 😋 recipe. RECIPE FOR POTATO PODIMAS

INGREDIENTS
  • 3 medium size potato
  • 2 tbsp oil
  • 1/2 tsp mustard seed
  • 1 tsp urad dal
  • 1 tsp bengal gram dal
  • 1/4 tsp hing/asafoetida
  • 1 spring curry leaves
  • 1/4 tsp turmeric powder
  • 1 tbsp sambar powder
  • salt to taste
PROCEDURE
  • wash potato thoroughly
  • peel the skin and discard it
  • finely chop the potatoes and keep it aside (or soak the chopped potatoes in water until cook)
  • heat oil in a cast iron wok
  • add mustard seeds and allow to crackle
  • add urad dal, bengal gram dal and hing
  • saute for few seconds
  • add curry leaves and allowed to turn crisp
  • add chopped potatoes
  • combine well with the seasonings
  • add turmeric powder, sambar powder and salt
  • mix well
  • cover and cook in low flame until cooked well 
  • potatoes turn slight crispy
  • serve with curd rice or any of your favorite rice
  • potato podimas tastes very delicious 😋
Note: 
  1. Do not add any water
  2. to get more crisp, cook in low flame

take 3 medium size potato

peel the skin and discard it and soak in water until use


chop the potatoes


heat oil in a cast iron wok


add mustard seeds and allow to crackle


add urad dal, bengal gram dal and hing, saute for few minutes


add curry leaves and allowed to turn crisp


add chopped potatoes


mix well with the seasonings


add turmeric powder, sambar powder and salt


combine well


cover with lid


cook on low flame until it cooked well (it takes 10-15 minutes)
