Corn Pulao is very simple, flavorful and delicious recipe. This recipe is just like many other pulao and its also a one pot meal. It goes well with raitha and papad. This corn pulao is very aromatic (because of whole spices) with mild flavors. In this recipe, i prepared fresh masala paste using garlic, ginger, onion, mint leaves and green chilli, it turns super flavor and delicious. This is my son favorite school lunch box recipe also. RECIPE FOR SWEET CORN PULAO

INGREDIENTS

For Masala Paste
  • 1/4 cup onion
  • 4 garlic
  • 1 inch ginger
  • 1 green chilli
  • 1 tbsp mint leaves
For Pulav
  • 1 cup basmati rice
  • 2 tbsp ghee
  • 3 cloves
  • 1 inch cinnamon stick
  • 1 star anise
  • 2 cardamom pod - crushed
  • 1/4 tsp shahi jeera
  • 1 bay leaf
  • 1/8 tsp turmeric powder
  • 3/4 tsp red chilli powder
  • 1/2 tsp garam masala powder
  • 1 cup sweet corn (fresh or frozen)
  • salt to taste
  • 2 cup water
  • 1/4 cup coriander leaves for garnish

CORN PULAO VIDEO RECIPE


PROCEDURE
  • wash and soak basmati rice in water for 30 minutes 
  • in a mixer grinder, add garlic, ginger, mint leaves, onion and green chilli
  • grind to a fine paste without adding water and keep it aside
  • heat ghee in a pressure cooker pan
  • add cloves, cinnamon stick, cardamom pod, star anise, bay leaf and shahi jeera
  • saute for few seconds until a nice aroma
  • add grounded masala paste, turmeric powder, red chilli powder and garam masala powder
  • saute for 1 minute in medium flame or until the raw smell goes off
  • add sweet corn (fresh or frozen)
  • mix well with all the spices
  • saute well and cook for 1 minute
  • add soaked basmati rice and discard the water
  • combine well and saute for 1 minute on high flame
  • add 2 cup water and salt, mix well
  • pressure cook for 3 whistle in medium flame
  • switch off the flame and allow the pressure to subside naturally
  • garnish with coriander leaves
  • serve hot with papad or raitha

Sweet Corn Pulav With Step-By-Step Photo Recipe


soak basmati rice in water 30 minutes


prepare the ingredients for grinding


add into mixer grinder


grind to a smooth paste without adding water


heat ghee in a pressure cooker pan, add cloves, cinnamon stick, cardamom pod, shahi jeera, star anise and bay leaf


saute for few seconds or until a nice aroma


add grounded paste, turmeric powder, red chilli powder and garam masala powder


saute well or until the raw smell goes away


add sweet corn


mix well with all the spices and saute for 1 minute


add soaked basmati rice


combine well and saute on high flame for 1 minute


add 2 cup water


add salt


mix well


pressure cook for 3 whistle
