Bottle Gourd is a vegetable which contains high on water about 92% and it has a rich source of vitamin C, K and Calcium. It helps in maintaining a healthy heart and brings down bad cholesterol levels. It is low in saturated fat, cholesterol and it has high in dietary fibre. This curry is very light, slightly tangy, tasty and super healthy recipe. Adding tomato to the bottle gourd which brings tangy taste and this recipe is one of the best Vegan Gluten Free recipe. RECIPE FOR BOTTLE GOURD CURRY

INGREDIENTS
- 2.5 tbsp oil
- 1/2 tsp cumin seeds
- 1 red chilli
- 3 cloves
- 1 inch cinnamon stick
- 1/4 tsp pepper corn
- 1 spring curry leaves
- 1 onion - finely chopped
- 1 tomato - finely chopped
- 1 tsp ginger garlic paste
- 1 bottle gourd - chopped
- 1 potato - chopped
- 1/4 tsp turmeric powder
- 2 tsp sambar powder
- salt to taste
- coriander leaves for garnish
PROCEDURE
- peel the skin of bottle gourd
- scoop out the seeds and discard it
- chop the bottle gourd and keep it aside
- peel the skin of potato and chop in medium size, then keep it aside
- heat oil in a pressure cooker pan
- add cumin seeds, cloves, cinnamon stick and pepper corn
- saute for few seconds
- then add red chilli and curry leaves, saute for few seconds
- add finely chopped onion
- saute well until onion turns translucent
- add ginger garlic paste and chopped tomato
- saute well until tomatoes turn mushy
- add turmeric powder and sambar powder
- mix well
- add chopped bottle gourd and potato
- combine well and cook for 1 minute
- now add 2 cup water or according to your curry consistency
- add salt and mix well
- pressure cook for 3-4 whistle
- allow the pressure to subside naturally
- garnish with coriander leaves
- enjoy this delicious and healthy curry with chapathi
Bottle Gourd Curry with Step-By-Step Photo Recipe
take 1 large bottle gourd
peel the skin
scoop out the seeds and discard it
chop into small pieces
heat oil in a pressure cooker pan
add cloves, cinnamon stick, pepper corn and cumin seed, saute for few seconds
add red chilli and curry leaves, saute for few seconds
add finely chopped onion
saute well until onion turns translucent
add ginger garlic paste and chopped tomato
saute well till the raw smell goes
add turmeric powder, sambar powder and garam masala powder
mix well
add chopped bottle gourd
add chopped potato
combine well with all the spices
add enough cup of water or according to your curry consistency
add salt
mix well
pressure cook for 3-4 whistle
bottle gourd curry ready
garnish with coriander leaves
serve hot with chapathi
