How to make ennai kathirikai kuzhambu
Ennai Kathirikai Kuzhambu or Stuffed brinjal curry is a traditional kuzhambu or curry recipe from Tamil Nadu. This curry is prepared by freshly roasted and grounded spices with coconut. To make this recipe we need lots of patience to prepare and stuff the brinjals. The stuffed brinjals are going to cook in the tamarind juice and the sesame oil. The slow process of cooking stuffed brinjal in tamarind juice will enhance the aromatic flavor and it tastes delicious. Mix this curry with hot steamed rice and with any vegetable curry or papad. RECIPE FOR ENNAI KATHIRIKAI KUZHAMBU

INGREDIENTS
- Tamarind - Gooseberry sized ball
- 6 brinjal or egg plant
- 1/4 tsp turmeric powder
- salt to taste
To Grind
- 1.5 tbsp bengal gram dal
- 1.5 tbsp coriander seeds
- 1 tbsp urad dal
- 5 red chilli
- 1.5 tbsp shredded coconut
For Seasoning
- 3 tbsp sesame oil
- 1/2 tsp mustard seeds
- 1/2 tsp fenugreek seeds
- 1/4 tsp hing / asafoetida
- 1 spring curry leaves
PROCEDURE
- soak tamarind with enough hot water for 20 minutes
- extract tamarind juice and discard the pulp
- wash and soak brinjals in water until cook
- heat a tsp of oil in a pan
- add coriander seeds, bengal gram dal and urad dal
- roast well until dal turns color
- add red chilli and fry for a minute
- add shredded coconut and fry for few more seconds, switch off the flame and allowed to cool
- transfer this mixture into mixer grinder
- grind to a smooth paste by adding little water and keep it aside
- make a cross + cut in the bottom of the brinjal or otherwise discard the stem and make a cross cut, leaving the bottom intact
- now stuff the brinjal with the grounded spice mix and keep it aside
- heat oil in a cast iron wok
- add mustard seeds, allow to splutter
- add fenugreek seeds and hing
- saute for few seconds
- add curry leaves and allowed to turn crisp
- now add stuffed brinjal and salt
- mix well
- cook on low flame till brinjals half cooked, stir often
- once brinjals half cooked, add tamarind juice, turmeric powder and the remaining grounded spice mix
- add 1 cup water and mix well
- cover and cook on medium flame until the curry slightly thickens
- once the oil float on the top of the curry, switch off the flame
- delicious stuffed brinjal curry is ready to be served with hot steamed rice
Stuffed Brinjal Curry with Step-By-Step Photo Recipe
soak tamarind in hot water for 20 minutes
wash and soak brinjal in water until cook
heat a tsp of oil in a frying pan, add coriander seed, bengal gram dal and urad dal
roast well until dal turns color
add red chilli and fry for a minute
add shredded coconut and saute for few seconds
switch off the flame and allowed to cool
transfer into mixer grinder
grind to a smooth paste by adding little water
make a cross cut in the bottom of the brinjal
stuff the brinjal with the grounded spice mix and keep it aside
heat oil in a cast iron wok
add mustard seeds and allow to crackle, then add fenugreek seeds and hing, saute for few seconds
add curry leaves and allowed to turn crisp
add stuffed brinjal
add salt
mix well and cook on low flame until brinjals half cooked, stir often
add tamarind juice and turmeric powder
add the remaining grounded spice mix
mix well and add 1 cup water
cover and cook on medium flame until the curry slightly thickens
once oil floats on the top of the curry, switch off the flame
